Smoked Salmon, Fennel, and Potato Hash

"There are many delicious alternatives to traditional corned beef hash
- 1 lb (455g) Russet or Yukon gold potatoes, peeled and cut into 1/2-in/12-mm cubes
- Kosher salt
- 2 medium fennel bulbs with their lacy stalks
- 1/4 C. (60ml) olive oil
- 1 C. (125g) chopped onion
- 1/2 lb (225g) hot-smoked salmon fillet, skin discarded and salmon flaked (see market note)
- 1 t. fennel seeds, crushed (see cooking tip below)
- Freshly ground black pepper

Flourless Peanut Butter and Chocolate Chip Cookies

I found this recipe years ago in a "Thank you" cookbook, courtesy of Bon Appétit magazine, for a paid subscription
- 1 C. Chunky old fashioned peanut butter
- (Not Skippy or Peter Pan… Use peanuts and salt only peanut butter)
- 1 C. Golden brown sugar; packed
- 1 Large egg
- 1 t. Baking soda
- 1/2 t. Vanilla extract
- 1 C. Semi-sweet chocolate chips (about 6 ounces)

- Filling:
- 5 graham crackers, broken into pieces
- 6 oz. Hershey’s chocolate bar, chopped
- 3 oz. marshmallow crème/fluff
- 24 miniature marshmallows
- Dough:
- 10 T. unsalted butter, at room temperature
- 1/2 C. dark brown sugar
- 1/2 C. granulated sugar
- 2 T. molasses
- 1 T. pure vanilla extract
- 11/2 C. all-purpose flour
- 1 C. graham flour
- 1/2 t. baking soda
- 1/2 t. fine salt
- 1/2 t. ground cinnamon
- 1/4 C. heavy cream
Cranberry-Pepper Jelly

A sweet-hot addition to that leftover holiday turkey sandwich or over cream cheese for spreading on crackers
- 3 Finely chopped red bell peppers
- 2 Finely chopped, seeded Fresno chilies or red Jalapeno chilies
- 1 C. Sugar
- 1 1/2 t. Crushed red pepper flakes
- 1/2 t. Kosher salt
- 1/4 C. Liquid pectin
- 1 T. Fresh lemon juice
- 3 C. Fresh or frozen (thawed) whole cranberries
Mother Daniel's Orange - Chocolate Pots de Creme

I stole Martha Stewart's Pots de Creme recipe a number of years ago when it appeared in "Everyday Food" magazine
- 1 C. heavy cream
- 1 C. whole milk
- Peel of two oranges (peel only, no white)
- 4 oz. bittersweet or semi-sweet chocolate, coarsely chopped (oin a pinch, chocolate chips
- will be just fine)
- 5 large egg yolks
- 1/3 C. sugar
- 1/4 t. salt
- 2 t. pure vanilla extract
- Boiling water
- Whipped cream, for serving (optional)
Throw It All In the Pot Pasta

Throw it all in the pot, INCLUDING the uncooked pasta, and cook! - Bring it to a boil, then reduce to a simmer
- 12 oz. linguine (3/4 of a 16-ounce box – Also, use regular old linguine or regular old
- spaghetti, not spaghettini, angel hair or quinoa pasta, as they have shorter cooking times.)
- 12 oz. cherry or grape tomatoes (about 3/4 of a pint), washed and halved
- 1 red onion, thinly sliced (about 2 cups)
- 4 cloves garlic, peeled and thinly sliced
- 2 t. sea salt
- 1/4 t. freshly ground pepper
- 1/2 t. red pepper flakes
- 2 sprigs basil (leaves only), plus some extra torn leaves for garnish
- 2 T. extra virgin-olive oil
- 4 1/2 cups water
- Freshly shredded parmesan cheese for topping the pasta
