Pumpkin Cobbler

Everyone who tries this delicious dessert likes it better than ordinary pumpkin pie
- Filling:
- 2 eggs, beaten
- 1 C. evaporated milk
- 3 C. cooked mashed pumpkin or butternut squash
- 1 C. white sugar
- 1/2 C. dark brown sugar
- 1 T. all-purpose flour
- 1 t. cinnamon
- 1/4 t. ginger
- 1/4 t. cloves
- 1/4 t. nutmeg
- 1/2 t. salt
- Crust:
- 1/2 cup butter
- 1 cup all-purpose flour
- 1 cup white sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla
- Topping:
- 1 tablespoon butter
- 2 tablespoons white sugar

- 2 -3 chicken breasts, in bite size pieces
- 2 T. ghee (or oil)
- 1/4 t. fenugreek seeds
- 10 curry leaves
- 2 large onions, chopped
- 4 -5 garlic cloves, chopped
- 2 t. grated fresh ginger
- 1 t. ground turmeric
- 1 t. chili powder
- 1 T. ground coriander
- 1 T. ground cumin
- 1/2 t. ground fennel
- 2 t. paprika
- 2 t. salt
- 2 T. vinegar
- 400 g chopped tomatoes ( 1 tin but I use 2 if adding vegetables)
- 6 cardamom pods, bruised
- 1 stick cinnamon
- 1 stalk lemongrass or 2 slices lemon rind
- 1 C. thick coconut milk

- 1 Boned, tied pork shoulder or butt (4-5 lbs.)
- 2 Onions, (1 lb. total, peeled and quartered)
- 4 Stalks celery, including leaves cut into chunks
- 4 Cloves garlic
- 2 Dried bay leaves
- 2 t. dried thyme or 2 T. fresh
- 1 about 1 t. Salt
- 1/2 C. Milk (Whole or Low-Fat)
Braised Escarole With White Beans

"Escarole always needs a good soak in cold water to rid it of the dirt trapped between its leaves
- 1 head escarole, dark green outer leaves discarded, inner leaves separated and trimmed of dark green tops
- 1/4 C. good extra-virgin olive oil
- 1 –2 cloves garlic, thinly sliced
- 1 –2 cups cooked white beans with some of their cooking liquid or a small ladleful of water
- Salt and pepper

- 2 t. Grated lime zest
- 2 T. Fresh lime juice
- 2 T. Unsalted butter, melted and cooled
- 1 T. Vegetable oil
- 1 t. Sugar
- 1 (14- to 15-ounce) Can black beans, rinsed and drained
- 2 Medium tomatoes, diced
- 4 Scallions, chopped
- 1/4 C. Chopped fresh cilantro
- 1 C. Quinoa
- 4-5 qt. Water
- 2- 2 1/2 T. Salt (1 tablespoon salt for each 2 quarts water)

- Nonstick cooking spray
- 8 oz. purchased biscotti
- 6 T. (3/4 stick) unsalted butter, melted
- 3 T. grated lemon zest (separated to 1 T., 2 T.)
- 1 (12 oz.) container fresh whole milk ricotta, drained, at room temperature
- 2 (8 oz.) packages cream cheese, at room temperature
- 1 1/4 C. sugar
- 1/2 C. limoncello liqueur*, store bought or homemade, recipe follows
- 2 t. vanilla extract
- 4 large eggs, at room temperature

Lexington Barbecue Restaurant Red Slaw

Classic Lexington, North Carolina style barbecue slaw
- 1 lb cabbage (Shred half, chop half, and combine)
- 1/4 C. Ketchup
- 1 T. Cider Vinegar
- 1/2 t. Salt
- 3 T. Sugar
- 1/2 t. Ground black pepper
- 1/4 - 1/2 t. Cayenne, according to taste.
