14 Day Oil/Vinegar Coleslaw

Mix dressing in a saucepan and bring to a boil to dissolve sugar
- Salad ingredients
- 1 large head of cabbage, shredded
- 1 large green pepper finely chopped (prefer shredding if you have a food processor)
- 1 large spanish onion finely chopped (prefer shredding if you have a food processor)
- several large carrots finely shredded (distribution of carrots should look equal to cabbage mixture)
- shredded broccoli stalks (optional)
- Dressing
- 1 1/2 cups white vinegar
- 1 cup oil
- 1 to 1 1/2 cups white sugar
- 1 tsps celery seed
- 1 1/2 tsps mustard seed or powder
- 1/2 tsp turmeric 1 1/2 tsps salt
Soft Ginger Bread Cookies

Soft and chewy
- 3/4 cup of butter
- 1 cup of brown sugar
- 1/4 cup of molasses
- 1 egg
- 2 cups of flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp of ground ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
Bran-Oat Muffins with Raisin, Cranberry or Dates

1. Preheat oven to 350° F
- 1/2 Cups All Purpose Flour
- 1/2 Cup Whole Wheat Flour
- 3/4 Cup Wheat Bran
- 3/4 cup oats
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Cup Buttermilk (of 1 cup milk with 1 tbsp lemon) (add a little more milk until cake-like consistency
- 1/2 Tsp Vanilla Extract
- 1 Large Eggs
- 2/3 Cup brown sugar
- 1/3 Cup vegetable oil
- 1 + Cup Dried Cranberries, raisins or dates
Crispy Flattened Potatoes

- 6 red or yellow potatoes (about 1 kg)
- 4 sprigs fresh rosemary, divided
- 6 cloves of garlic, skin on
- 2 shallots, peeled and quartered
- 1/2 tsp. kosher saltu6
- fresh ground pepper
- 3 tablespoons of extra-virgin olive oil, or coconut oil
Slow Cooker Moroccan Chicken Stew

This incredibly fragrant stew can also be prepared on the stove in a soup pot
- Moroccan spice blend:
- Serves 4 to 6
- 2 tsp (10 mL) ground cumin
- 2 tsp (10 mL) ground coriander
- 1 tsp (5 mL) ground ginger
- 1 tsp (5 mL) sweet paprika
- 3/4 tsp (4 mL) ground cinnamon
- 3/4 tsp (4 mL) ground black pepper
- 1/2 tsp (2 mL) ground allspice
- 1/4 tsp (1 mL) ground cloves
- Chicken stew:
- 28 oz (796 mL) 1 can diced tomatoes
- 1 1/2 cups (375 mL) chicken stock
- 1 small onion, peeled and diced into 1-inch pieces
- 2 medium carrots, peeled and diced into 1-inch pieces
- 1 medium parsnip, peeled and cut into 1-inch pieces
- 1 lemon, cut into quarters
- 1/2 cup (125 mL) raisins
- 2 tbsp (30 mL) honey
- 2 bay leaves
- 2 tbsp (30 mL) olive oil
- 2 lb (900 g) 1 chicken, cut into pieces (leave bones in)
- 19 oz (540 mL) 1 can chickpeas, drained and rinsed
- 2 cups (500 mL) fresh or frozen cauliflower florets
- salt
Carrot Ginger Mash

- Makes a serving for four
- 6-8 medium carrots
- dab of butter
- 1 teaspoon white wine vinegar
- 1 teaspoon grated fresh ginger root or 1/2 teaspoon of ground ginger
- salt and pepper to taste
Scotch Shortbread

These shortbreads melt in your mouth if you cook them for exactly 45 minutes
- 3 cups of flour
- Sift together white flour 3 times with 1 cup of rice flour (i.e. with 1/3rd of the rice flour and 1 cup of the flour each time)
- 1 cup of fruit sugar
- 1 lb of butter
- 1 tsp vanilla

- 1 egg yolk
- 3 whole eggs
- 2 tablespoons olive oil
Green Thai Coconut Chicken Curry

Absolutely mine and my husband's favourite
- 1 onion chopped
- 2 garlic cloves, peeled and finely chopped
- 1 tbsp freshly grated root ginger
- 3 green chillies
- Zest and juice of 1 lime (at least 2 tbsp)
- 2 tbsp of peanut oil or canola oil
- 2 tbsp of thai fish sauce
- 6 tbsp of freshly chopped coriander/cilantro (If you like cilantro, use more)
- 6 tbsp freshly chopped basil
- 1 lb./ 125 g skinless chicken breasts cut up into strips
- 14 fl oz can of coconut milk (not light)
- Basmanti Rice

- 1/3 cup of butter
- 1/2 cup of sugar
- 2 eggs
- 1 3/4 cups of flour (1 cup of white and 3/4 cups of whole wheat)
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 cup of mashed bananas (3 or 4 bananas)
- milk (approximately 6 tablespoons of milk or less)
- Handful or more of cranberries
- Handful of walnuts
