Vegan Flour-Free Oat Chocolate Chip Cookies.

You can keep the homemade oat flour very thick and textured like I did for a more "nutty" cookie
- dry:
- Vegan Flour-Free Oat Chocolate Chip Cookies
- vegan, makes about 24 cookies
- 3 1/4 cups oat flour
- 5 Tbsp ground seeds (flax, chia, pumpkin.. - I used flax and raw pumpkin seeds)
- 1 Tbsp baking powder
- 3 Tbsp chopped walnuts (optional)
- 3/4 tsp cinnamon
- wet:
- 3/4 cup virgin coconut oil, melted
- 3/4 cup organic sugar
- 1 mashed banana (or sub another 1/4 cup of non-dairy milk)
- 1 tsp lemon juice
- 1/3 cup warmed non-dairy milk
- 1 tsp vanilla extract (optional)
- fold in:
- 6 oz. vegan chocolate chips or chunks (semi-sweet chocolate)

In a large bowl place the scooped avocado pulp and lime juice, toss to coat
- 3 Haas avocados, halved, seeded and peeled
- 1 lime, juiced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne
- 1/2 medium onion, diced
- 1/2 jalapeno pepper, seeded and minced
- 2 Roma tomatoes, seeded and diced
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced

- Sun dried Tomato Basil Hummus
- makes about 3 cups
- 1 can white beans, cannellini
- 1 can garbanzo beans
- 1/2 cup sun-dried tomato strips- pure state - no oil (bagged)
- 1 cup fresh basil
- 1/2 cup lemon juice
- 6-8 cloves garlic
- 3/4 tsp truffle salt (or sea salt)
- 1/3 cup olive oil (add more or less to suit your preferences)
