Banana Cake

Blend all except flour Beat liquid into flour Bake in a ring tin for 45 min at 180c / 350f
- 2 eggs
- 1/2 cup oil
- 3/4 cup sugar
- 3 to 4 ripe bananas
- 1 1/2 cups of self raising flour
- 1 tsp bicarb dissolved in 3 tsp of milk
Swiss chard, leek, panchetta and thyme quiche

Adapted from a Muir Ranch CSA box recipe
- Frozen or refrigerated pie crust
- 3-4 leek
- 1 small bunch swiss chard (or kale)
- 1/2 Trader Joes tub of pancetta
- 1 tbsp butter
- 1 tbsp fresh chopped thyme
- 1 cup milk
- 3 eggs
- 4 oz goat cheese crumbles (or feta)
- salt and pepper
Roasted Butternut Squash Soup

Pre-heat your oven to 425F
- Optional garnish:
- 4 bags (12oz each) cubed butternut squash from Trader Joe’s
- 2 cups gluten free vegetable broth, NOT low-sodium (Trader Joe’s is the best!)
- 1 14 oz can light coconut milk (Trader Joe’s is great!)
- 1 tsp dried ginger
- 1/4 teaspoon cayenne pepper (this adds some good heat. You can add less or leave out if you don’t want it to be spicy!)
- Extra-virgin olive oil
- Sea salt and freshly ground black pepper to taste
- 1 package bacon of choice (try to buy one that’s uncured, organic, and nitrate/ nitrite-free!), cooked and crumbled
Chewy Sesame Seed Bars

Add all the dry ingredients to a large bowl
- 1 cup raw sesame seeds
- 1/4 cup raw sunflower seeds
- 1/4 cup raw pumpkin seeds
- 1/4 cup ground flax
- 1/4 cup unsweetened coconut flakes
- 2 tbs. chia seeds
- 1/2 cup raw honey (maple syrup?)
- 1/3 cup smooth organic peanut butter
Prosciutto Wrapped Figs

Preheat oven to 400 degrees F
- 4 large whole figs (or 16 small mission figs), quartered
- Goat cheese
- 1 (3-ounce) package prosciutto
- 3 tablespoons honey
Flaky Tomato and Mozzarella Tart

Heat oven to 425° F. On a lightly floured surface, roll the puff pastry into a 9-by-6-inch rectangle
- all-purpose flour, for the work surface
- 1/2 sheet puff pastry (1/4 of a 17.3-ounce package)
- 1 cup grape or cherry tomatoes (halved if large)
- 4 ounces grated mozzarella (1 cup)
- 1 tablespoon olive oil
- kosher salt and black pepper
Coconut Ice

1. Using a wooden spoon, mix together the condensed milk and icing sugar in a large bowl
- 250 g sweetened condensed milk
- 250 g icing sugar, sifted, plus extra for dusting
- 200 g dessicated coconut
- pink edible food colouring, optional
Pancakes (for filling not stacking)

These pancakes are thin. Roll them up and fill them with sweet or savory
- 1 1/4 cups all-purpose flour
- 1/2 cup milk
- 4 eggs
- 1 pinch of salt
- 2 tablespoons oil
Polenta, zucchini and tomato

Saute the zucchini in a pan with a little olive oil, salt and pepper and herbs
- 1 zucchini
- 1/2 can of chopped tomato
- 1/2 tube of vacuum-packed polenta
