  • 1 plum tomato, seeded and finely diced
  • 1/4 cup grated cotija cheese
  • 3 tablespoons creme fraiche
  • Kosher salt and freshly ground black pepper
  • Finely grated zest of 2 fresh limes
  • 2 green onions, green and pale green part, thinly sliced
  • 1/4 cup chopped fresh cilantro, plus whole leaves for garnish
