- 2 tablespoons cayenne pepper hot sauce (or other hot sauce), plus more to taste
- 2 teaspoons olive oil
- 2 hearts Romaine, cut into 1-inch strips (about 8 cups)
- 4 celery stalks, thinly sliced
- 2 carrots, coarsely grated
- 2 scallions, green part only, sliced
- 1/2 cup Blue Cheese Dressing, recipe follows
- 2 tablespoons mayonnaise
- 1/4 cup lowfat buttermilk
- 1/4 cup plain fat-free yogurt
- 1 tablespoon white vinegar
- 1/2 teaspoon sugar
- 1/3 cup crumbled blue cheese
- Salt and freshly ground pepper
Caesar Salad

For the croutons: Heat the olive oil over medium-high heat in saute or frying pan
- 1/2 cup extra-virgin olive oil
- 2 cups loosely torn country bread (about 3/4-inch pieces)
- Kosher salt and fresh cracked pepper
- 1/4 cup finely grated Parmigiano-Reggiano
- 2 tablespoons finely minced fresh parsley
- 1/2 cup finely grated Parmigiano-Reggiano
- 2 tablespoons roasted garlic
- 2 tablespoons sherry vinegar
- 1 tablespoon Dijon mustard
- 6 white anchovies
- 1 egg yolk
- 1 1/4 cups canola oil
- 30 large leaves from the hearts of romaine lettuce, left whole

Sweet Corn Pudding

Directions Preheat the oven to 350 degrees F
- Canola spray, for spraying baking dish
- 1 eggs, lightly beaten
- 1/2 cup shredded sharp Cheddar
- 1/2 cup whipped cream cheese
- 1/2 cup heavy cream
- 1/4 cup breadcrumbs
- 1 Tablespoons honey
- 1-1/2 t. chopped fresh marjoram
- 1 shallots, chopped
- 2 cups fresh corn kernels or one 8-ounce bags frozen corn kernels, thawed
- 2 tablespoons unsalted butter, melted
- Salt and freshly ground black pepper

To attain maximum heat, preheat broiler for at least 15 minutes before using
- 2 2 1/2-to-3-pound broiling chickens, halved
- 1/4 cup chopped Italian parsley

- 3 cups all purpose flour
- 3 cups whole wheat flour
- 1/2 cup (packed) brown sugar
- 2 teaspoons baking soda
- 1/4 cup (1/2 stick) chilled margarine or butter, cut into 1/2-inch cubes

Directions Slice the onions and cook in 1/4 stick butter until soft and light brown
- 1 whole large (or 2 small) onions
- 2 sticks butter (lots and lots of butter)
- 2 to 3 pounds cube steak (tenderized round steak that's been extra tenderized)
- Seasoned salt, such as Lawry's seasoned salt (or similar seasoned salt)
- 1/2 cups (approximately) Worcestershire sauce
- Hot sauce, such as Tabasco
- 4 whole French/deli rolls (Earthgrains are best!)
Drip Beef Sandwiches

- One 4-pound chuck roast
- Salt and black pepper
- 3 tablespoons butter
- 2 tablespoons canola oil
- 2 cups beef broth
- 2 tablespoons minced fresh rosemary
- 1 jar pepperoncini, juice and all
- 2 yellow onions, sliced
- 10 to 12 toasted, buttered deli rolls

- 1 to 2 tablespoons bourbon
