Preheat oven to 220C/425F degrees
- 2 cups (280 grams or 9.8 ounces) all-purpose flour
- 3/4 cup (80 grams or 2.8 ounces) unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups (250 grams or 8.8 ounces) granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup butter (57 grams or 2 ounces), melted and cooled
- 1/4 cup canola oil (or vegetable, safflower)
- 2 teaspoons instant coffee (optional)
- 1 teaspoon vanilla extract
- 1 cup (170 garms or 6 ounces) mix of chocolate chips and chunks
Shepherd's Pie

Coat a wide pan with olive oil and bring to a medium-high heat
- Extra-virgin olive oil, as needed
- 2 pounds boneless lamb shoulder or leg, cut into 1/2-inch dice
- Kosher salt
- 1/2 cup flour
- 2 large leeks, white part only, cut into 1/2-inch dice
- 3 ribs celery, cut into 1/4-inch dice
- 3 carrots, peeled and cut into 1/4-inch dice
- 2 cloves garlic, smashed and finely chopped
- 1/4 cup tomato paste
- 1 cup red wine
- 3 to 4 cups chicken stock
- 2 bay leaves
- 1 bundle fresh thyme

- Old fashioned Creme Glaze:

- 1-3 1-3 1-3 Table spoon milk or creme depending on thickness
