MAPLE-PECAN FUDGE

- 2 cups pecans
- Unsalted butter (for pan)
- 4 cups pure maple syrup
- 2 cups heavy cream
- 1/2 teaspoon kosher salt
- Special Equipment
- A candy/deep-fry thermometer; a 9x5" or 8x4" loaf pan
BAGELS

- For the water bath:
- 2 tablespoons unsalted butter, melted
- 2 1/4 teaspoons active dry yeast
- 2 1/4 cups lukewarm water
- 2 tablespoons sugar
- 3 tablespoons solid vegetable shortening
- 1 tablespoon salt
- 2 teaspoons freshly ground black pepper
- 6 cups high-gluten flour
- 1/4 cup sugar
- 1 teaspoon baking soda
- For the glazing and topping:
- 2 large egg whites
- 1 teaspoon cold water
- Sesame, poppy, and/or caraway seeds
- Kosher salt
- Minced onions sautéed in vegetable oil
Louisiana Meat Pies

- 3/4 lb. 85% ground beef
- 3/4 lb. ground pork
- 1 t salt, 1/2 t pepper
- 1 T veg oil
- 1 onion finely chopped, 1 grn bell pepper finely chopped
- 6 scallions (shite parts) finely chopped
- 3 cloves minced garlic
- 1/4 t cayenne pepper
- 2 T A.P. flour
- 1 C chicken broth
- Diced green parts of scallion

- 4 C A.P. Flour
- 2 t salt
- 1 t baking powder
- 8 T veg shortening (Diced and Cold)
- 1 C chicken broth

- 2-1/2 cups Quick Cooking Oats
- 1 Quart plus 3/4 cup Greek Yogurt; vanilla; fat free; divided
- 1 cup Sugar; divided
- 1 Egg
- 2 tablespoons Cornstarch
- 4 cups Blueberries; fresh or frozen; divided
- Flour; as needed
Pumpkin-Sour Cream Coffee Cake with Pecan Streusel

- 1 cup canned pumpkin
- 1/3 cup packed brown sugar
- 1/3 cup dried cranberries or golden raisins
- 1 tablespoon all-purpose flour
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg

- 1 cup granulated sugar

POPEYE'S SPICY CHICKEN - (copycat)

1. Place cut-up chicken in a large bowl, and cover with buttermilk

- 1/3 cup water
- 1 cup hot red pepper sauce (I like Louisiana Hot Sauce)
- 4 cups flour
- 2 teaspoon pepper
- 2 teaspoon paprika
- 3 teaspoons cayenne pepper
- 1 quart buttermilk (optional)
- Salt, Pepper, and Garlic Powder (to taste)
- 1 (1 to 2 1/2-pound) chicken, cut into pieces

- 2 T sugar
- 1/2 t yeast
- 1 1/3 C Ice Water
- Sauce
- 1 28 iz can tomatoes.
- 1 T olive oil
- 2 cloves minced garlic
- 1 t salt
- 1 t orageno
- 1/4 t pepper
- 1 t red wine vinegar
Red Pickled Onions

- 1 C apple cider vinegar
- 1/2 C red wine vinegar
- 1/4 C sugar
- 1 t kosher salt
- 1/8 t ground allspice
- pinch of red pepper flakes
