Joe’s Lobster Pie

This is a great, rich tasty New England treat!
- 10 tablespoons, divided
- 1/2 cup good-quality sherry
- 1/4 tablespoon black pepper
- 2 1/4 cups lobster meat cut up
- 2 tablespoons all-purpose flour
- 1 1/2 cups Half-and-Half
- 4 egg yolks (extra large) beaten
- Topping:
- 1/2 cup Ritz crackers, crushed
- 1/2 tablespoon paprika
- 2 tablespoons grated Parmesan cheese
- 4 tablespoons melted butter

Salsa di Pomodoro
- 1 35-ounce can peeled Italian tomatoes, seeded and lightly crushed with their liquid
- 1/4 cup virgin olive oil
- 1 small onion, chopped (about 1/2 cup)
- 1/4 cup finely shredded peeled carrots
- 1/4 cup finely chopped celery, including leaves
- 4 fresh bay leaves or 2 dried bay leaves
- Salt
- Crushed hot red pepper

Heat the oil and butter in the bottom of a large pot on medium heat
- 2 tablespoons olive oil
- 1 stick of butter
- 1/2 cup flour
- 2 medium onions, chopped (about 2 cups)
- 2 stocks of celery, chopped
- 2 tablespoons minced shallots
- 3 tablespoons tomato paste
- 1 tablespoon minced garlic
- 1/2 teaspoon cayenne
- 1 teaspoon thyme
- 1 1/2 teaspoons salt
- 1/4 teaspoon freshly ground pepper
- 1 dash nutmeg
- 1 dash papirka
- 2 cups of clam juice
- 1/2 cup brandy
- 2 bay leaves
- 2 cups of heavy cream
- 2 lbs fresh or frozen lobster

- 1/2 cup vinegar
- 1/2 cup sugar
- 1 medium green pepper, cut into 1-inch squares
- 2 tablespoons cornstarch
- 1 teaspoon soy sauce
- 1 16 ounce can small carrots, drained
- 3 cups hot cooked rice
