PASTA FASULI SOUP-CAMELIO'S RECIPE

Saute the oil with chopped onion and garlic
- 2 tablespoons olive oil
- 1 small onion, chopped
- 4 cloves garlic, minced
- 8 ounces tomato sauce
- 1/4 teaspoon basil
- 1/2 teaspoon parsley
- pinch red pepper flakes
- 2 8-ounce cannelloni beans with juice
- 1 10-ounce chicken broth
- 1 cup cooked elbow pasta or other small pasta
- greated cheese
ZOCCOLO-BREAD "CLOG"-from Lidia

The zoccolo will be crispy on the outside and tender on the inside
- Day-old country-style bread from loaves large enough to yield twelve pieces of bread cut as described below
- Vegetable oil as needed
SCALLOPS-SEARED

Heat olive oil in a large non stick skillet on very high heat
- 3 tablespoons olive oil
- 1 1/2 lbs Sea Scallops
- 1 1/2 tablespoons butter
- 1/4 teaspoon tarragon
- 1/4 teaspoon thyme
- 1/2 teaspoon parsley flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon marjoram
BEEF BOURGUIGNON

Heat olive oil in a large skillet
- 2 TABLESPOONS OLIVE OIL
- 5 MEDIUM ONIONS, SLICED
- 3/4 POUND MUSHROOMS, WASHED, TRIMMED AND SLICED
- 2 1/2 POUNDS SIRLOIN TIPS, CUT INTO 1 INCH CUBES
- 1/2 TEASPOON SALT
- 1/4 TEASPOON MARJORAM LEAVES
- 1/4 TEASPOON THYME LEAVES
- 1/8 TEASPOON PEPPER
- 2 TABLESPOONS FLOUR
- 3/4 CUP BEEF BROTH
- 2 CUPS OF RED BURGUNDY (USE ONLY WINE THAT YOU WOULD ENJOY DRINKING)
- 1 BAG OF WIDE NOODLES
- 1 LOAF OF FRENCH BREAD (FOR DIPPING INTO THE SAUCE)
THREE BERRY PIE

Heat oven to 450 degrees F
- 1 pkg. Pillsbury refrigerated pie crusts, softened as directed on the package
- 1 1/2 Cups sugar
- 5 tablespoons cornstarch
- 2 tablespoons quick cooking tapioca
- 1/4 teaspoon salt
- 3 cups fresh or frozen (thawed and drained) blackberries
- 2 cups fresh or frozen (thawed and drained) raspberries
- 2 cups fresh or frozen (thawed and drained) blueberries
- 1 tablespoon milk
- 2 teaspoons sugar

VEAL PICCATA

Place the veal cutlets between two sheets of plastic wrap
- 1 pound veal cutlets
- Salt and freshly ground pepper
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter
- 1 tablespoon virgin olive oil
- 1/2 cup chicked broth
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh flat-leaf parsley
ROAST BEEF-PRIME RIB

Preheat the oven to 425 degrees F
- 8 potatoes, peeled and cut into 1 1/2" x 1 1/2" pieces
- 1/8 pound butter melted
- One 4-rib fully trimmed prim rib roast (about 8 pounds)
- Salt
- Pepper, freshly ground
- 2 medium carrots, peeled and cut into chunks
- 2 small onions
- 2 cups beef broth
BEEF STEW

Old Fashioned Beef Stew. A New England favorite
- 1/2 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 3/4 lbs. beef stew meat(I use serloin tips)cut into 1 inch pieces
- 2 tablespoons shortening
- 6 cups hot water
- 3 pared medium potatoes, cut into 1 inch cubes
- 1 medium turnip, cut into 1 inch cubes
- 5 carrots, cut into 1 inch pieces
- 1 green pepper, cut into strips
- 1 cup sliced celery cut into 1 inch pieces
- 1/2 cup diced onion
- 1 tablespoon salt
- 2 beef bouillon cubes
- 1 bay leaf
PEPPERS-STUFFED-from Lidia

Peppers with a slight kick to them, like cubanellas or banana peppers are wonderful for this dish
- Salt
- 1/3 cup Arborio rice
- 8 cubanella or banana peppers
- 3 tablespoons virgin olive oil
- 1 medium yellow onion chopped (about one cup)
- 8 ounces ground meat (A mix of ground beef, pork and veal is best, but, that might not be practical. Try at least to used a blend of ground pork and beef, but, failing that, all ground beef or pork will do)
- 1 large egg
- 1/3 cup Parmigiano-Reggiano cheese
- 3 tablespoons chopped fresh Italian parsley
- 2 tablespoons chopped fresh oregano
- 3 cups Tomato Sauce (see Tomato sauce recipes)
