SALMON-SEARED WITH BALSAMIC GLAZE

Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 1/8 cup soy sauce
  • 1 1/2 tablespoons fresh lemon juice
  • 1/8 teaspoon ginger
  • 2 tablespoons brown sugar (when measuring pack the brown sugar in the tablespoon)
  • 1 teaspoon corn starch for thickening
  • 4 salmon filets, skin on, center cut
  • salt and black pepper (freshly ground)
  • 2 to 3 tablespoons olive oil

Preparation

Step 1

In a small bowl stir together balsamic vinegar, water, soy sauce, fresh lemon juice, ginger, brown sugar and corn starch.

Pat the salmon dry and season with the salt and pepper.

Heat oil in a 12 inch nonstick skillet over medium heat, not smoking (do not use extra virgin olive oil, it smokes at a lower temperature than regular olive oil or light olive oil). Increase to high heat, add the salmon skin side up, and sear until well browned, about 5 to 6 minutes.

Turn the fish over and sear until just cooked through, about 4 to 5 minutes.

Remember cooking times depend on the thickness of the fish and the heat.
