Cinnamon Buns - Quick

We developed this recipe using a dark cake pan, which produces deeply caramelized buns
- FILLING
- 3/4 cup packed (5 1/4 ounces) light brown sugar
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1 tablespoon ground cinnamon
- 1/8 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- DOUGH
- 1 1/4 cups whole milk, room temperature
- 4 teaspoons instant or rapid-rise yeast
- 2 tablespoons granulated sugar
- 2 3/4 cups (13 3/4 ounces) all-purpose flour
- 2 1/2 teaspoons baking powder
- 3/4 teaspoons salt
- 6 tablespoons unsalted butter, melted
- GLAZE
- 3 ounces cream cheese, softened
- 2 tablespoons unsalted butter, melted
- 2 tablespoons whole milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Salmon with Mussels and Cabbage

1 Peel and chop finely the shallot and the fennel
- 4 salmon fillets of 200 g. (7 oz.)
- 300 g. (10 oz.) blue mussels
- 1 small fennel
- 2 cloves garlic, crushed
- 1 large shallot
- 1 tuft of thyme
- 2 tablespoons capers, finely chopped
- 1/2 teaspoon orange peel, finely grated
- 1 small cabbage, cut in quarters
Onion Soup Gratinee Lyonnaise

Can prepare in one large earthenware casserole or individual bowls
- 1 tbsp. unsalted butter
- 2 tbsp. corn oil
- 1-1/4 lb. onions, peeled and sliced thin (see onion prep)
- 1/2 lb. Emmenthaler cheese, grated
- 1/2 lb. Gruyere cheese, grated
- 10 c. chicken stock
- 1-2 cloves garlic, peeled, crushed, and chopped
- 1/4 tsp. ground black pepper
- Salt to taste
- 1 French baguette, cut into 36-48 slices
Roasted Chicken Thighs with Tomatoes, Olives, Feta, Greens

Accompany with greens (mixed Southern, Chard, Collards, etc
- 8 bone-in, skin-on chicken thighs (2-1/2 pounds)
- 3 TB olive oil
- 1 pint grape tomatoes, halved lenghwise
- 1/2 c pitted Spanish olives
- 6 medium shallots, halved lenghwise, peeled (about 6 oz)
- 3 sprigs fresh thyme
- S & P
- Fresh mint leaves for garnish
- Feta cheese, crumbled, for garnish
Drop Biscuits

About 12 4-Inch Biscuits; use pre-heated, cast iron biscuit pan
- 2 c cake flour or 1-3/4 c whole wheat flour, pre-sifted
- 1 tsp salt
- 2-1/2 t double-acting baking power
- 2 - 6 TB chilled butter or shortening or combo
- 1 c milk

- 2/3 cup walnuts
- 1/2 cup whole wheat flour
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 2 tablespoons chopped thyme
- 1 tablespoon granulated sugar
- 1 cup (2 sticks) unsalted butter, room temperature
- 1/2 cup powdered sugar
- 2-3/4 cups powdered sugar
- 1/2 teaspoon finely grated orange zest
- 1/4 cup fresh orange juice
- 1 tablespoon heavy cream
- 1 tablespoon virgin coconut oil, melted ???

Burnt Carrots with Goat Cheese and Arugula

To make garlic chips, slice garlic into very thin pieces with slicer or mandoline?
- Garlic chips:
- 2 TB red wine vinegar
- 1/2 c Plus 2 TB olive oil, DIVIDED
- 8 medium carrots, peeled
- 1 TB fresh thyme, chopped
- 1 small bunch flat-leaf parsley, leaves only
- 2 bunches arugula, trimmed, washed and dried
- 6 oz goat cheese, sliced into 1/2" thick rounds
- 8 large garlic cloves
- 1-1/2 c olive oil

Make cake: 1. Heat oven to 350°F with rack in middle
- Cake:
- 1/2 cup sifted cake flour (not self-rising; sift before measuring), plus additional for dusting pan
- 5 large eggs, separated, left at room temperature for 30 minutes
- 1 teaspoon vanilla
- 1/2 cup plus 2 tablespoons granulated sugar, divided
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1/2 stick (1/4 cup) unsalted butter, melted and cooled
- 2 tablespoons confectioners' sugar
- Espresso syrup:
- 1/2 cup espresso or very strong black coffee
- 2 tablespoons sugar
- 1 tablespoon Cognac or brandy
- Filling:
- 8 ounces mascarpone cheese
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon Cognac or brandy
- 1/2 cup chilled heavy cream
- Ganache:
- 12 ounces 60% bittersweet chocolate, finely chopped
- 3/4 cup heavy cream

Parker House Rolls with Thyme

Bogus recipe. Just make parker house rolls and once baked, add sprigs of thyme
- 1 packet Parker House roll mix (included with mix)
- 1 yeast packet (included with mix)
- 8 Tbs. (1 stick) (4 oz./120 g) unsalted butter
- 1 cup (8 fl. oz./250 ml) warm water (110° to 120°F/43° to 49°C)
- 1 egg
- All-purpose flour as needed
- 1/2 tsp. large-flake sea salt
- Fresh thyme sprigs for garnish
