Simple Fish Bouillabaisse

Should be able to throw in some clams and/or mussels near end
- For the crostini:
- 2 Tbs. olive oil
- 10 garlic cloves, thinly sliced
- 1 Tbs. fennel seeds
- 3 bay leaves
- 1/4 cup tomato paste
- 1 1/2 tsp. salt
- 1/3 cup dry white wine
- 1 large fennel bulb
- 1 can crushed tomatoes, with juices
- 5 cups fish or vegetable stock
- 2 lb. fresh cod or monkfish fillets, cut into 2-inch chunks
- Baguette slices, each about 2 inches in diameter and 1/2 inch thick
- Extra-virgin olive oil for brushing
- 1 or 2 garlic cloves, halved lengthwise
Orzo with Ham and Goat Cheese

Preheat broiler and lightly oil a flameproof 3-quart shallow baking dish (2 inches deep)
- 1 pound orzo (rice-shaped pasta)
- 1/2 pound sliced ham, coarsely chopped (2 cups)
- 1/2 pound mild soft goat cheese, crumbled
- 5 scallions, thinly sliced
Quick-Braised White Beans with Chard

select the “sear” function and set the timer to 10 minutes
- 1/2 yellow onion, diced
- 2 garlic cloves, minced
- 3 Tbs. olive oil
- 1 bunch Swiss chard, stems and leaves coarsely chopped
- 1 cup (7 oz./220 g) dried white beans
- 4 cups (32 fl. oz./1 l) chicken broth
- 1 Tbs. chopped fresh rosemary, plus more for garnish
- Kosher salt and freshly ground pepper
- 1/4 cup (1 oz./30 g) panko (Japanese bread crumbs)
Applesauce Oatmeal Muffins

Muffins can be frozen and reheated in the microwave
- 1 c old fashioned oats (not instant)
- 1 c skim milk
- 1 c whole wheat flour
- 1/2 c brown sugar
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp sugar
- raisins or nuts (optional)
Chocolate and almond stuffed (dried) figs

Uses DRIED figs. Large figs for 6 servings; small for 4
- 1/4 c blanched whole almonds, plus 12 extra
- 2 TB sugar
- 1 oz semisweet chocolate, finely chopped
- 12 large dried figs
Perfect Poached Eggs

- 4 large eggs
- 1 TB distilled white vinegar
- Salt and pepper
Chocolate Angel Pie

Serve the assembled pie within 3 hours of chilling
- FILLING
- 9 ounces milk chocolate, chopped fine
- 5 ounces bittersweet chocolate, chopped fine
- 3 large large egg yolks
- 1-1/2 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/2 cup half-and-half
- 1-1/4 cups heavy cream, chilled
- MERINGUE CRUST
- 1 TB cornstarch, plus extra for pie plate
- 1/2 c(3-1/2oz) granulated sugar
- 3 large egg whites
- Pinch cream of tartar
- 1/2 tsp vanilla extract
- TOPPING
- 1-1/3 cups heavy cream, chilled
- 2 TB confectioners' sugar
- Unsweetened cocoa powder
Sweet Potato and Leek Custard

Preheat an oven to 325°F (165°C)
- Canola oil as needed
- 2 Tbs. olive oil
- 4 medium leeks, white and light green portions, halved lengthwise and cut crosswise into half-moons
- 1/2 cup (125 ml) sherry
- 2 1/2 cups (625 ml) heavy cream
- 2 garlic cloves, minced
- 4 drops of hot sauce
- 2 tsp. ground coriander
- 3 cups (750 g) roasted and pureed sweet potatoes
- 4 oz. (125 g) Blackberry Farm Singing Brook or pecorino romano cheese, shredded
- 1 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 4 eggs
- Blackberry Farm Brebis or Singing Brook cheese for garnish
- Blackberry Farm apple-onion jam or caramelized shallots for garnish

- Cheddar Pie Dough:
- 2 1/2 cups all-purpose flour
- Salt
- Great Value Iodized Salt, 26 oz
- 2 sticks cold unsalted butter, cut into small pieces
- 1/4 to 1/2 cup ice water
- 1 cup shredded sharp white cheddar cheese
- All-purpose flour, for surface
- 1 large egg, lightly beaten for egg wash
- Coarse sanding sugar, for sprinkling
