Roasted Tomato Basil Pesto

- 9 large Roma tomatoes, sliced in half lengthwise
- 1/2 cup almonds, toasted
- 2 garlic cloves
- 1 cup tightly packed basil plus more for garnish
- 1/4 cup extra virgin olive oil plus more for drizzling
- 2 tablespoons nutritional yeast, optional
- Kosher salt
- Freshly ground black pepper

- 4 tablespoons olive oil (divided)
- 1 large sweet onion, diced
- 2 red bell peppers, diced
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 1/2 pounds white button mushrooms, diced
- 1/4 cup chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1 can (28 ounces) fire-roasted diced tomatoes
- 2 chipotle peppers in adobo, chopped (seeds removed for less heat)
- 3 cups low-sodium vegetable broth
- 1 cup dried French green lentils, rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 bay leaves
