Cranberry Almond Filling

In food processor, process almond paste and sugar
- Scant 1/2 cup (4oz) almond paste, rm temp
- 1/2 cup (4oz) sugar
- 1/2 cup (1 stick) salted butter, rm temp
- 2 eggs, rm temp
- 1/3 (2oz) flour
- 1 bag (12oz) cranberries, rinsed and drained well
Rhubarb & Strawberry Crumble with Lime Yogurt & Pistachios

This is the simplest way to enjoy rhubarb as soon as it comes into the markets and for as long as its season lasts
- 1 1/2 1 1/2 1/2-inch pounds rhubarb, strings peeled and discarded (if needed), cut into 1/2-inch pieces
- 1 1 12 pint (about 12 ounces) strawberries, hulled and quartered
- 1/2 1/2 1/2 cup cup granulated sugar
- 1/4 1/4 1/4 cup honey
- 1 1 1 lime, zested and juiced
- 2 2 1/8 pinches plus 1/8 teaspoon fine sea salt
- 1 1/4 1 1/4 1/4 cups unbleached all-purpose flour
- 1/2 1/2 1/2 cup old-fashioned rolled oats, uncooked
- 8 8 8 tablespoons (1 stick) cold unsalted butter
- 1/4 1/4 1/4 cup packed brown sugar
- 2 2 2 cups low-fat or full-fat plain Greek yogurt
- 1/4 1/4 1/4 cup toasted pistachios, finely chopped (optional)
Olive and Walnut Quesadillas

Coat one side of each tortilla with vegetable oil spray
- 6 (7- or 8-inch) flour tortillas
- 1 cup mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 1/4 cup chopped pitted ripe olives
- 3 TBSP toasted, chopped walnuts
- 1/2 tsp dried oregano
Protein Balls

- 1 cup of oats
- 1/2 cup ground flax
- 1/2 cup peanut putter
- 1/2 cup mini chocolate chips
- 1/3 cup honey
- 1 tsp vanilla

- 2 1/2 cups all-purpose our
- 1/2 cup sugar, plus 3 tablespoons if using fresh
- cranberries
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into bits
- 1 1/4 cups fresh cranberries, chopped coarse, or 1 1/4
- cups dried cranberries or dried cherries
- 1 large egg
- 1 large egg yolk
- 1 cup heavy cream
- Crème fraîche or whipped cream, for serving
