Coconut Cream Pie

In a large bowl, sift the flour and salt
- Shortbread Crust:
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 sticks unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Filling:
- 2 cups coconut milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 4 egg yolks
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons all purpose flour
- 1 1/2 cup whipping cream
- 1 tablespoon powdered sugar
- 1 cup sweetened coconut, lightly toasted
Puppy Chow Cookies

COOKIES: Preheat oven to 350°F Line a baking sheet with parchment, set aside
- COOKIE:
- 1/2 cup butter, room temperature
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg
- 1 Tbsp vanilla
- 1 tsp baking soda
- 1 tsp salt
- 1 1/4 cup flour
- COATING:
- 1 1/2 cups semisweet chocolate chips
- 1/3 cup creamy peanut butter
- 1/4 cup butter
- 2 cups powdered sugar
Pizza Poppers

Preheat the oven: Preheat the oven to 500°F
- Equipment:
- 1 1 1 ball pizza dough (about 1 pound), store-bought or homemade
- 1 1 1 cup tomato sauce, store-bought or homemade
- 2 2 2 cups shredded mozzarella cheese
- 1/2 1/2 1/2 pound cooked sausage, crumbled (optional)

Greek Salad with Avocado

In a large serving bowl, combine the cucumbers, tomatoes, red onion, kalamata olives and parsley
- 2 English cucumbers, peeled in stripes and cut into 1/2 inch slices
- 1 1/2 pounds small tomatoes, I use cocktail tomatoes, stemmed and quartered
- 1/2 red onion, thinly sliced
- 1 1/2 cups kalamata olives, pitted and halved
- 1/4 cup Italian flat leaf parsley, chopped
- 2 avocados, pitted and cut into chunks
- 1 cup feta cheese, broken into large chunks
- 1/2 cup extra virgin olive oil
- 1/2 cup red wine vinegar
- 2 cloves garlic, peeled and minced
- 1 tablespoon oregano
- 2 teaspoons sugar
- 1 teaspoon each of kosher salt and freshly ground black pepper
Black Bean Burgers

Drain, but do not rinse, the black beans
- 2 cans (14.5 Each) Seasoned Black Beans
- 1 cup Seasoned Breadcrumbs
- 1/4 cup Grated White Onion
- 1 whole Egg
- 1/2 teaspoon Chili Powder

- Hot Sauce (I Used Choloula)
- 8 slices Swiss Cheese

Pasta Salad with Green Onion Dressing

For the GREEN ONION DRESSING: Heat a grill
- GREEN ONION DRESSING:
- 1/2 cup olive oil
- 1 bunch green onions (scallions), trimmed, white bottoms and green tops separated
- 1 small clove garlic, chopped
- 1 1/2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons sour cream
- Salt and freshly ground black pepper
- PASTA SALAD:
- 12 ounces bow tie pasta, cooked according to package directions
- 3 teaspoons vegetable oil
- 1 red onion, cut into 1/4-inch thick rings
- 1 red pepper, seeded and diced
- 1 yellow pepper, seeded and diced
- 1 orange pepper, seeded and diced
- 1 cup chopped fresh parsley
- Salt and freshly ground black pepper
- 1 cup shredded unsweetened coconut, toasted
Naked Hibiscus Chocolate Cake

For the Chocolate Cake: Preheat the oven to 350 (F)
- For the Chocolate Cake:
- (makes a double layer 8-inch cake)
- 1 3/4 cups (8.75 ounces) all-purpose flour
- 2 cups (14 ounces) granulated sugar
- 3/4 cup (2.25 ounces) unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup (8 ounces) buttermilk
- 1/2 cup (4 ounces) vegetable oil
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup (8 ounces) freshly brewed hot coffee
- For the Hibiscus Cream Cheese Frosting:
- (makes around 2 cups, enough for a scantily-frosted cake)
- 1/2 cup (4 ounces) water
- 2 tablespoons dried hibiscus flowers
- 8 ounces cream cheese, at room temperature
- 1/2 cup (1 stick // 4 ounces) unsalted butter, at room temperature
- 3 1/2 cups (14 ounces) confectioner's sugar, sifted (see baker's notes)
- a pinch of kosher salt
Fresh Raspberry and Gin Slushies

In a blender, combine ice, sparkling water, gin, sugar, lime juice, and frozen raspberries
- 2 1/2 cups ice cubes
- 1 to 1 1/2 cup(s) sparkling water
- 1/2 cup gin
- 6 to 8 tablespoons granulated sugar (depending on the sweetness of your berries and your sweet tooth)
- 1/4 cup fresh lime juice
- 10 ounces fresh raspberries, frozen
- Lime wheels for garnish
Strawberry Streusel Skillet Sweet Bread

Prepare strawberry compote by combining all ingredients in a medium saucepan
- Bread:
- 3 1/4 cups) all-purpose flour
- 1 tsp. fine salt
- 2 1/2 Tbsp. white or brown sugar
