Tomato Basil Orzo Soup

In a large pot melt butter over medium heat
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1/4 cup packed basil leaves, finely chopped
- 1 30-ounce can tomato sauce
- 4 cups chicken broth OR vegetable broth
- 2 cups heavy cream OR fat free half and half
- 2 cups cooked orzo pasta
- salt and pepper to taste
Neapolitan Cupcakes

1. To make the cupcakes: preheat the oven to 350 degrees and line two cupcake pans with cupcake liners
- For the Cupcakes:
- 2 1/4 cups cake flour
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 4 egg whites
- 1 1/4 cups milk
- 1 1/2 cups granulated sugar
- 1 stick butter, at room temperature
- 2 teaspoons vanilla extract
- 1/4 cup cocoa powder
- 1/4 cup strawberry jam
- For the Frostings:
- 2 sticks butter, softened
- 6 cups powdered sugar
- 2 teaspoon vanilla extract
- 2 Tablespoon heavy cream
- 2 Tablespoon cocoa powder
- 1 Tablespoon strawberry jam
Dark Chocolate and Caramelized White Chocolate Cupcakes

Preheat oven to 350 degrees F
- Cupcakes:
- 3/4 cup whole milk
- 1/3 cup canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/3 cup dark or dutch process cocoa powder
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/8 teaspoon cinnamon
- Frosting
- 8 ounces good quality white chocolate, finely chopped*
- 1/3 cup heavy cream, plus more as needed
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 1/4 cups powdered sugar, sifted, plus more as needed
- It is crucial to use high quality white chocolate here. Look for cocoa butter as the first ingredient. White baking chips or candy coating made from hydrogenated oils rather than cocoa butter will NOT work in this recipe.
Green Bay Booyah

Pat beef and chicken dry with paper towels and season with salt and black pepper
- 2-1/2 lbs. bone-in, English-style short ribs, trimmed, meat and bones separated (I used bone-in beef chuck short ribs)
- 2-1/2 lbs. bone-in chicken thighs, trimmed
- salt
- pepper
- 1 T. vegetable oil
- 2 yellow onions, chopped fine
- 2 ribs celery, minced
- 8 c. low sodium chicken broth
- 2 bay leaves
- 4 c. shredded green cabbage
- 1 28-oz. can diced tomatoes
- 8 oz. rutabaga, peeled and cut into 1/2” pieces
- 1 lb. russet potatoes, peeled and cut into 1/2” pieces
- 3 large carrots, peeled and sliced 1/4” thick
- 1 c. frozen peas
- 1 T. freshly squeezed lemon juice
Apple Cinnamon Streusel Pancakes

Preheat a large pan, skillet, or griddle to medium-low heat
- pancakes:
- 1 cup flour
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup + 2 tablespoons milk
- 1 egg
- 2 tablespoons oil or melted butter
- 1 medium red apple (I used gala - use your favorite!)
- streusel:
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 6 tablespoons cold butter, diced
Cherry-Bourbon Pie

- Crumble:
- 1/2 cup old-fashioned oats
- 1/4 cup all-purpose flour
- 1/4 cup (packed) light brown sugar
- 1/4 cup sliced almonds
- 1/2 teaspoon kosher salt
- 1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2" pieces
- Pie:
- Nonstick vegetable oil spray
- 1 pie crust, homemade or store-bought
- 3 24.7-ounce jars pitted sour cherries in syrup, drained well (about 6 cups)
- 3/4 cup sugar
- 1/4 cup bourbon
- 3 tablespoons cornstarch
- 2 tablespoons fresh orange juice
- 1 tablespoon finely grated orange zest
Kale, Charred Corn and Feta Salad

Slice the corn off of the cob, reserving the kernels and discarding the cob
- Vinaigrette:
- 8 cups curly Kale, torn into bite sized pieces
- 2 ears grilled corn on the cob
- 2 ounces Feta cheese crumbled
- 1 cup cherry tomatoes, sliced in half
- 1 shallot minced
- 1 tablespoon Dijon mustard
- 2 teaspoons honey (or agave)
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- Kosher salt and black pepper

- 2 red apples, such as Cortland or McIntosh
- 2 1/2 cups apple cider
- 3 1/2 cups all-purpose flour, plus more for dusting

- 3 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg

- 1 large egg plus 1 egg yolk
- 1/4 cup buttermilk

- 1 pound honey smoked ham deli meat, shaved

- 6 tablespoons earth balance vegan butter
- 1 medium onion, peeled and halved
- 1 package of gluten free pasta (I love this brand the most, it's incredible!)
