For jam, pulse cherries and apple briefly in a food processor until cut into mostly pea-sized chunks (do not puree)
- 6 ounces (1 heaping cup) pitted tart cherries (fresh or frozen)
- 1/4 cup peeled and finely grated granny smith apple*
- 1/2 cup granulated sugar
- 1 1/2 cups chocolate wafer cookie crumbs (from about 7 ounces cookies)
- 2 tablespoons granulated sugar
- 1/8 teaspoon fine sea salt
- 5 tablespoons unsalted butter, cut into chunks
- 2 ounces dark or semisweet chocolate, finely chopped
- 7 ounces good quality dark chocolate (70-75%), finely chopped
- 1 1/4 cup heavy whipping cream, divided
- 1/4 cup unsalted butter, cut into chunks
- 1 teaspoon vanilla extract
Snickerdoodle Cobbler

Preheat oven to 350° Spray an 8x8 baking dish with cooking spray
- 1 cup flour
- 1 1/2 tsp baking powder
- 1 tsp salt, divided
- 2 tsp cinnamon, divided
- 3/4 cup granulated sugar
- 1/2 cup milk
- 2 Tbsp vegetable oil
- 1 tsp vanilla extract
- 3/4 cup light brown sugar

Halibut and Chickpea Salad

For the HALIBUT: Place a grill pan over medium-high heat
- For the HALIBUT:
- 1 (6-ounce) halibut steak
- 2 teaspoons extra-virgin olive oil
- 1/4 teaspoon salt

Easy Enchilada Beef Nachos

- Chipotle Cheddar Cheese Sauce:
- 1 pound ground beef
- 1 (10 ounce) can Old El Paso Enchilada Sauce
- 1 (4 ounce) can Old El Paso Diced Green Chilies
- 1 bag tortilla chips
- 1/2 cup fresh cilantro, chopped
- 1 jalapeno, sliced
- your favorite salsa, for serving*
- 2 tablespoons butter
- 2 tablespoons flour
- 3/4 cup hard cider
- 1/3 cup whole milk
- 2 cups sharp cheddar cheese, shredded

- 1-1/2 cups chopped onion
- 3 cloves garlic, pressed

- 2 (14.5 oz) cans diced tomatoes
- 1 (5 oz) can tomato paste
- 1 Tablespoon dried oregano leaves
- 1 Tablespoon dried basil leaves
- 1 Tablespoon sugar
- 1/2 teaspoon dried red chili peppers
- 1 teaspoon coarse ground black pepper
- 3/4 teaspoon kosher salt
- 10 oz cheese tortellini
- 3 oz fresh baby spinach leaves
Strawberry Lemon Cupcakes

Preheat the oven to 350°F
- For the CAKE:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/4 cup vegetable shortening
- 1 1/2 cups granulated sugar
- 3 eggs, room temperature
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking powder

- Frosting:
- 4 large egg whites, at room temperature
