Lemon Meringue Cheesecake

Preheat oven to 300° Crust: Combine all ingredients for crust in a bowl evenly
- Crust:
- 2 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 6 Tbsp butter, melted
- Cheesecake:
- 4 (8 oz) packages cream cheese, room temperature
- 1 1/2 cups granulated sugar
- 6 egg yolks (reserve whites for meringue)
- 2 Tbsp flour
- 1 cup sour cream
- 2 Tbsp lemon zest (2 large lemons)
- Meringue Topping:
- 6 egg whites
- 1 1/2 cups granulated sugar
Kicked Up Broccoli-Cheese Soup

In a large, heavy bottomed pot (I used a 7 quart Dutch Oven), melt butter over low heat
- 1/2 cup butter, melted
- 4 large shallots, finely chopped
- 1 teaspoon finely minced garlic
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 2 cups chicken stock (has more flavor than broth)
- 1-1/2 cups heavy cream
- 1/8 teaspoon ground nutmeg
- 4 heaping cups broccoli florets
- 24 oz shredded pepper jack cheese
- 8 oz shredded extra sharp cheddar cheese, more for sprinkling on top
- 1 Tablespoon finely ground black pepper
- sliced green onion for garnish
Perfect Parker House Rolls

Place milk in a small saucepan and bring to a simmer
- 1 1/2 cups milk
- 1 stick unsalted butter, cut into pieces, plus more for brushing
- 1/4-1/2 cup sugar*
- 1 package active dry yeast
- 1/2 cup warm water
- 3 large eggs, lightly beaten
- 1 1/2 teaspoons salt
- 6-8 cups all-purpose flour
- Sea Salt for sprinkling

- 1 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk

Chocolate Cream Pie with Swiss Meringue

Place the wafers into the bowl of a food processor fitted with the blade attachment; pulse until finely ground
- 12 ounce chocolate wafers
- 8 tablespoon unsalted butter (melted)
- 1/2 cup milk
- 1 teaspoon unflavored gelatin
- 1 cup heavy cream
- 2 tablespoon granulated sugar
- 8 ounce milk chocolate (finely chopped)
- 1 1/2 teaspoon vanilla extract (divided)
- 6 large egg whites
- 1 1/2 cup bakers sugar (may substitute granulated)
Crock Pot Mojo Pork with Cuban-Style Black Beans

Add all ingredients except those for Cuban-Style Black Beans to a large crock pot then stir to combine
- For the Cuban-Style Black Beans:
- 3-4 lb boneless pork butt, trimmed of excess fat then cut into big hunks
- 3/4 cup chicken broth
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup lemon juice
- 1 onion, cut into big chunks
- 1 jalapeno, sliced in half
- 1 head garlic, cloves separated and peeled
- 1-1/2 teaspoons salt
- 1 teaspoon dried oregano
- 1/2 teaspoon pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 2 bay leaves
- 1 Tablespoon extra virgin olive oil
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 2 cloves garlic, minced
- salt and pepper
- 1/2 teaspoon dried oregano
- 15oz can black beans, drained and rinsed
- 1/4 cup chicken broth
- 1 teaspoon red wine vinegar
- For the Cilantro-Lime Rice:
- 2 cups water
- 1 Tablespoon canola or vegetable oil
- 1/2 teaspoon salt
- 1 cup long grain white rice
- 1/4 cup chopped cilantro
- juice of 1/2 lime
Chicken Chopped Salad with Creamy Honey Mustard Dressing

For the Chicken Breasts Heat EVOO in a sauce pan to medium heat
- For the Chicken Breasts:
- 2 chicken breasts
- 1 tablespoon EVOO
- ~2 teaspoons garlic salt
- salt and pepper to taste
- For the Creamy Honey Mustard
- Dressing (adapted):
- 1/2 cup 2% Greek yogurt
- 2 tablespoons yellow mustard
- 3 tablespoons organic honey
- 1/2 teaspoon garlic powder
- pepper, to taste
- For the Salads (serves 2):
- 4 cups spring lettuce mix
- 2 tablespoons gorgonzola cheese
- 1/4 cup Blue Diamond Smokehouse Almonds
- 1/2 cup diced apples
- 1/2 cup blueberries, fresh
- 1/4 cup bacon bits
- 2 cooked chicken breasts (see above)
- 4 tablespoons homemade honey mustard dressing (see above)
Banana Coconut Cream Parfaits

1. To the bowl of a food processor, add ricotta cheese, cottage cheese, Neufchatel cheese and thick coconut milk
- 1 1/2 cups part-skim ricotta cheese
- 1 cup of fat free cottage cheese
- 4 oz Neufchatel cheese, slightly softened
- 2/3 cup of canned coconut milk (see note below)
- 1/2 cup of confectioner’s sugar (plus more if needed)
- 1 teaspoon of vanilla
- 2 large bananas, sliced into 24 slices each
- 1/2 cup of sweetened, shredded coconut, toasted
- 15 vanilla wafers, crushed into crumbs
