Position the oven rack in center of the oven
- 2 (10-ounce) boxes frozen spinach
- Salt
- 1 pound whole wheat or whole grain penne pasta or macaroni (any short cut pasta)
- 2 tablespoons extra-virgin olive oil
- 1 large shallot, chopped
- 4 cloves garlic, finely chopped or grated
- 1 (10-ounce) box frozen artichoke hearts, defrosted, halved, pat dry
- 1/2 cup dry white wine
- 4 tablespoons butter
- 3 slightly rounded tablespoons flour
- 2 cups milk
- Freshly ground black pepper
- Freshly grated nutmeg
- 5 ounces Gruyere cheese, shredded (about 1 1/2 cups)
- 1 cup shredded Parmigiano-Reggiano cheese
Creamy Cauliflower Soup with Brown Butter

Trim the cauliflower, removing any green leaves and leaf stems
- 1 head (approx. 2 pounds) cauliflower
- 7 tablespoons unsalted butter, divided
- 1 leek, white and light green parts only, halved and thinly sliced
- 1 small onion, halved and thinly sliced
- salt & pepper
- 4 1/2 cups water
- 1/2 teaspoon white wine or sherry vinegar
- 3 tablespoons fresh chives, snipped

Chipotle Honey Lime Pork Tenderloin

Place the lime zest, lime juice, honey, salt, and garlic in a small, lidded jar and shake to combine
- 1 whole pork tenderloin, about 1 pound
- 1 tsp lime zest
- 1/2 cup freshly squeezed lime juice

- 3 large red bell peppers or six small red peppers
- 1 teaspoon olive oil
- 1/2 medium onion, chopped
- 1 pound ground sirloin
- 2 garlic cloves, minced
- 1 teaspoon salt

- 1 teaspoons cinnamon
- pinch of nutmeg
- 3 cups spinach
- 1/4 cup panko bread crumbs
- 1 egg
- 1/2 cup chicken stock

Broccoli Cheese Soup

Melt butter in a pot over medium heat, then add the onions
- 1 whole Onion, Diced
- 1 stick 1/2 Cup Butter
- 1/3 cups Flour
- 4 cups Whole Milk
- 2 cups Half-and-half
- 4 heads Broccoli Cut Into Florets
- 1 pinch Nutmeg
- 3 cups Grated Cheese (mild Cheddar, Sharp Cheddar, Jack, Etc.)
- Small Dash Of Salt (more If Needed)
- Freshly Ground Black Pepper
- Chicken Broth If Needed For Thinning
Guinness Ice Cream with Chocolate-Covered Pretzels

In a large saucepan, combine the Guinness with the cream and milk and bring to a simmer over moderately high heat
- 2 cups Guinness (16 ounces)
- 2 cups heavy cream
- 1 3/4 cups whole milk
- 15 large egg yolks
- 1 cup granulated sugar

- 1 lb pasta, any shape, cooked, drained and rinsed

- 1 seedless cucumber, quartered and sliced
- 2 handfulls Earthbound Organics® Kale Italia
- 1 bottle Marzetti® Simply Dressed® Lemon Vinaigrette
- 1/2 cup parmesan cheese, shredded
