Schokolade Palatschinken

For the crepe base: Dissolve the cocoa powder in the boiling water in a bowl
- CREPE BASE:
- 2 tablespoons cocoa powder
- 2 tablespoons boiling water
- 1 cup beaten whole eggs
- 1 cup all-purpose flour
- 1 cup whole milk
- 1 tablespoon unsalted butter, melted
- Pinch ground cinnamon
- Pinch salt
- WHIPPED CREAM:
- 1 cup heavy cream
- Pinch sugar
- A few drops vanilla extract
- RASPBERRY COULIS:
- 4 ounces raspberries
- 1 ounce sugar
- 1 ounce red wine
- 1 teaspoon cornstarch mixed with 1 teaspoon cold water
- WHITE/DARK CHOCOLATE GANACHE:
- 1/2 cup cream
- 1 tablespoon unsalted butter
- Splash booze, such as brandy, amaretto, Curacao, etc.
- 8 ounces chocolate (white or dark)
- Oil, for greasing
- Dulce de leche, for filling
- Sliced fresh strawberries and bananas, for filling
- Chopped chocolate pieces, for garnish
- Powdered sugar, for garnish
- Cocoa powder, for garnish
Salted Caramel Vanilla Bean Layer Cake

Salted Caramel Sauce: Make sure all your ingredients are ready to go before you begin
- Salted Caramel Sauce:
- 1 1/2 cup white sugar
- 12 tablespoons butter, softened
- 3 eggs, room temperature
- 3 teaspoons vanilla extract (or a combo of extract, vanilla bean paste or vanilla bean)
- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 1/4 cup whole milk
- 1 cup salted caramel sauce*, cooled.
- 2 sticks of unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons cream or milk
- 1 cup sugar
- 6 TBs Salted Butter- cut into small pieces
- 1/2 cup heavy cream
- 1/2 tsp Sea Salt
Banana Cake with Chocolate Hazelnut Frosting

Preheat the oven to 350 and grease two 6" round pans
- For the Cake:
- 1 1/2 C flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2/3 C butter
- 1 2/3 C brown sugar
- 1 C masked bananas
- 1 egg
- 1 egg yolk
- 1/4 C + 1 Tbls buttermilk

- 1/2 C mini chocolate chips
- For the Frosting:

- DOUGH:
- 1 1/8 cups warm water
- 3 teaspoons active dry yeast
- 1 tablespoon honey

- PIZZA:
- 6 slices thick-cut bacon
- 8 ounces fresh spinach
- 2 garlic cloves, minced
- 1 tablespoon olive oil

- 1/3 cup freshly grated mozzarella cheese

Slow Cooker Tomato Basil Soup

Place all the ingredients except for the cream and Parmesan into a slow cooker
- 2-28oz. cans San Marzano tomatoes
- 4 cups fresh tomatoes, diced
- 3 large carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 medium sweet onions, chopped
- 4 whole cloves of garlic, minced
- 1 tsp. sea salt, more if desired
- Freshly ground pepper to taste
- 900 ml. or 1 quart of vegetable broth
- 1/2 cup fresh basil
- 1 1/2 cups half and half cream
- Freshly grated Parmesan (optional)
Fettuccine with Shredded Zucchini, Fresh Ricotta, and Lemon Zest

- 1 pound fettuccine
- 4 tablespoons extra-virgin olive oil
- 3 or 4 garlic cloves, finely chopped or grated
- Zest of 1 to 2 lemons

Southwest Quinoa and Grilled Corn Salad

Grill the cobs of corn in their husks over medium high heat for 10 minutes
- 4 cobs fresh corn
- 2 cups quinoa, white or red or a combo
