Enchilada Soup

In a heavy bottomed pot, cook the ground beef over medium heat until browned
- 1 15 ounce Can Diced Tomatoes
- 1 1/2 Lb Ground Beef
- 1 Large Can (28 oz) Enchilada Sauce
- 1 15 ounce Can Black Beans, drained and rinsed
- 1 15 ounce Can Corn, drained
- 1 Cup Sliced Zucchini
- 2 Tablespoons Lime Juice
- 1 Medium Onion, chopped
- 4 Oz Green Chiles
- 1 Ts Cumin
- 1 Ts Chili Powder
- 1/2 Ts Salt, Pepper
Meatloaf with Awesome Sauce

Preheat the oven to 450 degrees F
- Meatloaf:
- 1 tablespoon unsalted butter, for greasing
- 2 pounds lean ground chuck
- 1/2 cup dry breadcrumbs
- 1/2 cup tomato sauce
- 1 1/2 teaspoons sea salt
- Freshly cracked black pepper
- 1 egg
- 1 yellow onion, coarsely grated
- 1 russet potato, grated
- Awesome Sauce:
- 1/2 cup tomato sauce
- 2 tablespoons prepared mustard
- 2 tablespoons dark brown sugar
- 2 tablespoons plain white vinegar

Line a baking sheet with parchment paper and set aside
- 8 ounces semi-sweet chocolate, melted
- 2 1/4 cups all-purpose flour*
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt

- 1 1/4 cups Imperial Sugar Extra Fine Granulated Sugar

- 1 1/2 pounds chicken breasts, cut into 1 1/2 inch pieces
- 1 red bell pepper, seeded and sliced into 1/4 inch slices
- 1 onion, thinly sliced
- 1 heaping tablespoon fresh ginger, minced
- 1 cup frozen peas, thawed
- 1 tablespoon lime juice
- cilantro for garnish
- cooked white rice

- 1 lb orecchiette pasta
- 3 1/2 tablespoons extra virgin olive oil
- 2 ounces pancetta, diced
- 1 shallot, diced

- 1 garlic clove, minced
- 2/3 cup white wine
