Grilled Chicken Thigh and Cucumber Salad

Light a grill. Rub the chicken thighs with 2 tablespoons of the olive oil and season with salt and pepper
- 6 skin-on, boneless chicken thighs (2 pounds), pounded 1/2 inch thick
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- Kosher salt
- Pepper
- 3 tablespoons red wine vinegar
- 1 tablespoon minced shallot
- 1 teaspoon minced garlic
- 1 English cucumber, thinly sliced
- 1/4 cup thinly sliced red onion
- 1 small Fresno or red jalapeño chile, thinly sliced
- 2 tablespoons chopped mint, plus whole leaves for garnish
- 3 tablespoons chopped roasted unsalted almonds
Chocolate Whiskey Bundt Cake with Whiskey Caramel Sauce

- 3/4 cup granulated sugar

- Easy Pickled Carrots and Peppers:
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 8 3 ounce pieces of tilapia, skin removed
- 1 tablespoon vegetable oil
- 8 white corn tortillas
- 1 jalapeño, thinly sliced
- 1/2 cup cotija cheese
- 1/2 cup cilantro leaves

- 2 limes, quartered

Brown Butter Peanut Butter Doughnuts with Mixed Berry Jelly Icing

- For the Doughnuts:
- 1 cup Bob's Red Mill Whole Wheat Pastry Flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup granulated sugar
- 3 tablespoons unsalted butter
- 1 large egg
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1/4 Cup Melted Peanut Butter
- For the Icing:
- 1 1/2 cups powdered sugar
- 4 Tablespoons Buttermilk/Whole Milk
- 1/4 Cup Bonne Moman Mixed Berry Jelly
Italian Salad Dressing
