Homemade Cinnamon Oatmeal Cream Pies

Preheat an oven to 325. Cream the butter with the sugars and honey until light and fluffy
- For the frosting:

- 1 ounce honey
- 1 egg
- 1 teaspoon vanilla
- 4 ounces cake flour
- 2 ounces oat flour (or finely ground oats)
- 6 ounces rolled oats, whole
- 2 ounces rolled oats, roughly ground
- 1 1/2 teaspoon baking soda
- 1/2 ?teaspoom salt
- 8 ounces vanilla frosting, recipe below
- 4 ounces unsalted butter, at room temp.
- 4 cups powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon heavy cream

Apple Cheesecake Cookie Cups are a cream cheese infused sugar cookie full of cinnamon and apples
- 1/4 cup unsalted Challenge Butter, softened
- 4 ounces Challenge Cream Cheese, softened
- 3/4 cup packed brown sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda

- 2 (8 ounce) packages cream cheese, softened
- 16 ounces mascarpone, softened
- 3 large eggs
