Chocolate Hazelnut Rolls with Quick Puff Pastry

To make the puff pastry, in a medium bowl combine the flour and salt
- For the Quick Puff Pastry:
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1/4 teaspoon fine salt
- 20 tablespoons high-quality salted butter (10 ounces), cold and cut into cubes
- 2/3 cup ice cold water
- For the Filling:
- 1 (11-ounce) can Hazelnut Praline Paste (or 1 1/4 cups chocolate hazelnut spread)
- 3 tablespoons salted butter, melted (omit if using chocolate hazelnut spread)
- 1/2 cup coarsely chopped roasted hazelnuts
- 1/2 cup coarsely chopped dark chocolate
- For the Glaze:
- 1 1/2 cups powdered sugar
- 2-4 tablespoons water or heavy cream (depending on how thick you'd like your glaze)
Dairy-Free, Egg-Free Double Chocolate Cupcakes

Make the cupcakes: Heat oven to 350° F
- For the cupcakes:
- 1 cup white whole-wheat flour
- 3/4 cup granulated sugar
- 1/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 1 cup soy milk
- 2 teaspoons apple cider vinegar
- 1/4 cup canola oil
- 2 teaspoons pure vanilla extract

Classic Butternut Squash Soup

Heat oil in a large soup pot
- 2 tablespoons extra-virgin olive oil
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
- 4 cups cubed butternut squash, fresh or frozen

Beer Glazed Citrus Chicken with Orange Arugula Greens

- 3 tablespoons orange marmalade
- 1 teaspoon freshly grated orange zest

- 2 tablespoons olive oil
- 1 1/2 pounds boneless chicken thighs (and/or drumsticks)
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 cups baby arugula
- 1/2 red onion, thinly sliced
- 1 tangerine or orange, segmented
- 3 tablespoons olive oil
- 1 tablespoon freshly squeeze orange juice
- 2 teaspoons red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons pine nuts, toasted

- Orange Almond Cake:
- 4 cups plus 2 tablespoons flour
- 3 teaspoons baking powder
- 1 and 1/4 teaspoons salt
- 3/4 cup butter, softened
- 2 and 1/2 cups plus 2 tablespoons sugar
- 1/4 cup plus 2 tablespoons oil
- 2 teaspoons vanilla
- 1 teaspoon almond extract
- 3 tablespoons finely grated orange zest
- 2 egg whites 3 eggs
- 1/2 cup fresh-squeezed orange juice
- 1 and 1/2 cups full fat plain yogurt
- 1 tablespoon powdered sugar, optional garnish
- 3 tablespoons sliced almonds, optional garnish
- edible flowers, optional garnish
- Orange Blossom Buttercream:
- 1 cup butter
- 4 and 1/4 cup powdered sugar
- 2-3 tablespoons milk
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon orange blossom water
5 Minute Avocado Cilantro Dressing

- half an avocado
- 1/4 1/4 1/4 cup Greek yogurt
- 1/2 1/2 1/2 cup water

- 5 Tbsp chicken broth, divided
- 1 1/2 tsp orange zest
- 2/3 cup fresh orange juice
- 1 Tbsp fresh lemon juice
- 1 1/2 Tbsp honey
- 2 1/2 tsp cornstarch
