Lemon Cake

Calling all lemon lovers, this moist and fluffy lemon cake is great for spring time
- CAKE:
- 3 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of 2 lemons
- 1 cup butter, softened to room temp
- 2 cup sugar
- 4 eggs, separated
- 1 cup milk
- 1 teaspoon lemon extract
- SYRUP:
- 1/4 cup sugar
- Juice and zest of 1 lemon
- LEMON CURD:
- 4 eggs
- 4 egg yolks
- 1 cup sugar
- 3/4 cup lemon juice
- Zest of 2 lemons
- 8 ounces butter
- ICING:
- 4 sticks of butter, room temperature
- 1 1/2 cup Crisco
- 1 bag powdered sugar
- 1 to 2 teaspoon extract
- 1 to 2 cups lemon curd
- 1/2 cup cream or milk
Sugar Cookies Bakery Style

- 8 TBS Butter
- 1/2 C Shortening
- 1/2 C Light Brown Sugar
- 1 C Sugar
- 2 Large Eggs
- 1 1/2 Tsp Vanilla
- 2 1/2 C Flour

Pizza Casserole, Deep Dish (WW)

Preheat oven to 425 degrees
- 1 lb Lean Ground Sirloin
- 11/2 cans of Italian-flavored Tomato Sauce
- 15 Oz Italian Seasoned Diced Tomatoes
- House Seasoning
- Italian Seasoning
- Garlic Sauce
- 1-10 ounce can of refrigerated Pizza Crust
- 2 C Part-Skim Mozzarella (6 ounces)
- Mushrooms & Canadian Bacon
Cream Cheese Frosting (Pipeable)

Beat butter and cream cheese just until combined
- 8 oz Cream Cheese, room temp
- 1/2 C Butter, Set out for JUST 30 minutes before use
- 2 1/2 C Powdered Sugar
- 1 tsp Vanilla
- 1 tsp Cream or Milk as needed
Mexican Rice

- 1 T olive oil
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 C white rice
- 1/2 C tomato puree
- 1 C chicken stock
Potatoes, Baked and Sliced

Preheat oven to 425. If Skin is tough, peel potatoes; otherwise, scrub and rinse them
- 4 Medium Potatoes
- 1 Tsp Salt
- 3 Tbs Melted Butter
- 3 Tbs Chopped Fresh Herbs, such as parsley, thyme, or sage
- 3 Tbs Dried Herbs of your choice
- 4 Tbs Cheddar Cheese, Grate
- 1 1/2 Tbs Parmesan Cheese
Chocolate Sheath Cake

Preheat oven to 400 degrees Sift together sugar and flour
- Ingredients:
- 2 C sugar
- 2 C flour
- 2 sticks butter
- 4 Tbs cocoa
- 1 C water
- 1/2 C buttermilk
- 2 eggs
- 1 tsp soda
- 2 tsp vanilla
- Icing:
- 1 stick of butter
- 4 Tbs cocoa
- 6 Tbs milk
- 1 box of powdered sugar
- 1 tsp vanilla
- 1 C pecans
Lemon Mousse Cheesecake

- 1/4 C Flour
- 1 C Milk
- 2 C Heavy Cream
- 2 C White Cheddar Cheese (Grated) (8 oz)

- 1/2 tsp Garlic Salt
