Special K Peanut Butter Cookies

Have everything pre-measured and ready to go
- 1 C White Sugar
- 1 C White Corn Syrup
- 1 tsp Vanilla
- 1 pinch of Salt
- 1 1/3 C Peanut Butter
- 5 C Special K Cereal
Enchilada Casserole, Skinnied Down (WW)

Preheat oven to 375 º Crumble 6 cups of chips into a large mixing bowl
- Ingredients:
- 1 Large 13-ounce ackage of Wow Doritos Chips (save out 2 cups) ( whole bag =
- 18 points)
- 2 Tbsp. grated onion
- 10 ounce-can chili with beans (10 Points per can)
- 10/15 ounce can enchilada sauce (4 Points per can)
- 8 oz. Can tomato sauce
- 1 + 1/2 cups shredded fat-free cheddar cheese (8 Points Total)
- Topping:
- 2 C Chips (Points figured in above)
- 1/2 C Shredded Cheddar Cheese (Points figured in above)
- 1 1/4 C Fat-Free Sour Cream (6 Points total)
Shortbread Bites

Preheat oven to 325 degrees In a food processor with knife blade attachment, pulse flour and sugar until combined
- 1 1/4 C all-purpose flour
- 3 Tbs sugar
- 1/2 C cold butter (1 stick), cut up
- 1 Tbs red and green nonpareils or sprinkles, or 1/2 C mini baking bits.

Texas White Sheet Cake

In a large saucepan, boil water and butter
- 1 C Butter
- 1 C Water
- 2 C Flour
- 2 C Sugar
- 2 Eggs
- 1/2 C Sour Cream
- 1 tsp Almond Extract
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 1/2 C Butter
- 1/4 C Milk
- 4 1/2 C Powdered Sugar
- 1/2 tsp Almond Extract
Enchiladas (Naida)

Brown meat, follow directions to add Taco Seasoning
- Corn Tortillas (thick ones)
- Oil
- Enchilada Sauce (Large Old El Paso Mild)
- Taco Seasoning
- 1-1.5 lb Ground Meat
- Small Jar of Mild Pace Picante
- 4 C Mexican Shredded Cheese
Punch (Mom)

Mix and chill well. Note: Doubling the recipe makes Lu’s large punch bowl
- 4 C (64 oz) Cranberry Juice
- 4 C Pineapple Juice
- 1 1/2 C Sugar
- 1 TB Almond Extract
- 2 Liters of Ginger Ale
Meatloaf

Preheat oven to 400 degrees Combine above ingredients and add meat
- Topping:
- 1 1/2 lbs of Meat
- 1/2 C ketchup
- 1/2 C tomato juice
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp Garlic Powder
- Worchestershire (maybe 2 TBS)
- 2 eggs
- 3/4 C bread crumbs
- 1/4 C chopped onions
- 2 tsp mustard
- 1/4 C ketchup
- 1/2 tsp mustard
- 2 tsp brown sugar
- 1/2 Can of diced tomatoes.
Lemon Ice Box Pie (Betty)

- 1/2 C lemon juice
- 1 can Eagle Brand
- Butter
- 1 box of vanilla wafers
- 6 egg whites
- 1 1/2 C sugar

- Filling:
- 4 egg whites, room temperature
- 1 1/3 cups sugar
- 2 teaspoons cornstarch
- 2 teaspoons white vinegar
- 3/4 teaspoon vanilla extract
- 1 (2-ounce) square unsweetened chocolate
- 4 egg yolks
- 1/2 cup sugar
- 1/8 teaspoon salt
- 2 tablespoons water
- 1 cup heavy cream, whipped
- To finish:
- 1 cup heavy cream, whipped
- Chocolate shavings
