Four-Grain Fitness Pancakes

In a bowl, whisk together the flours, cornmeal, wheat germ, baking powder, cardamom, baking soda, and salt
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup rye flour
- 1/2 cup barley or buckwheat flour
- 1/4 cup cornmeal
- 1/4 cup toasted wheat germ
- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs, separated
- 1 1/2 cups buttermilk
- 1/2 cup milk
- 1/4 cup canola oil, plus extra for greasing
- 2 tablespoons honey or maple syrup
- Plain yogurt for topping
- Fresh sliced nectarines, blueberries, or blackberries, or Sugar-Free Apple Spread for topping
Cantaloupe, Pluams, Cherries with Mint and Vanilla

Combine sugar and mint in a large bowl
- 4 teaspoons sugar
- 1 -2 tablespoon fresh mint leaves, minced
- 1/4 teaspoon vanilla extract
- 1/2 cantaloupe, rind and seeds removed, cut into 1/2-inch pieces (about 3 cups)
- 2 red plums, pitted and cut into 1/2-inch pieces (about 2 cups-can also use black plums)
- 8 ounces fresh cherries, pitted and halved (about 2 cups)
- 1 -2 tablespoon fresh lime juice

- 1/2 kg small courgettes
- 3 cloves garlic, unpeeled
- 1/2 tbs fresh coriander, chopped
- 1/2 tbs fresh parsley, finely chopped

- 1 can (28 oz) peeled Italian plum tomatoes
- 3 chopped cloves garlic
- 2 tbsp olive oil
- 6 pitted and halved kalamata olives
- 6 pitted and halved Spanish green olives
- 1 tbsp capers
- 1 lb linguine
- 1 tbsp chopped fresh basil

- 2-4 Quorn breasts (8 ounces total), thinly sliced

- 1/4 cup extra-virgin olive oil (EVOO)
- 2 tablespoons hot pepper sauce (eyeball it)
- 2 cloves garlic, finely chopped
- Juice of 1 lemon, plus 2 teaspoons grated peel
- 2 teaspoons sweet smoked paprika (about 2/3 palmful)
- 16 jumbo shrimp, deveined and peeled with tail left on
- 3/4 pound veggie chorizo sausage, casings removed, cut on an angle into 12 slices
- 2 cups chicken broth
- 1 cup frozen peas
- 4 scallions, finely chopped
- 2 pinches saffron threads or 1 1/2 teaspoons turmeric
- 2 cups couscous
- 1/3 cup finely chopped cilantro (a generous handful)
