- 2 egg yolks
- 6 tbsp (78g) sugar
- 1 1/2 tbsp cornstarch
- 1 cup + 2 tbsp (270ml) milk
- 1 tbsp (14g) salted butter
- 1 tsp vanilla extract
- Chocolate Ganache
- 12 oz (338g) semi sweet chocolate chips

- Cake
- 2 cups (14 ounces) sugar
- 2 cups (8 1/2 ounces) King Arthur Unbleached All-Purpose Flour
- 2 tablespoons (3/8 ounce) Instant ClearJel® or cornstarch
- 3/4 cup (2 1/4 ounces) Double-Dutch Dark Cocoa or Dutch-process cocoa
- 2 teaspoons baking powder
- 2 teaspoons espresso powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 4 large eggs
- 3/4 cup (5 1/4 ounces) vegetable oil
- 2 teaspoons vanilla extract
- 1 1/4 cups (10 ounces) water
- Filling
- 12 ounces semisweet chocolate
- 6 ounces cream (light, whipping, or heavy) or milk, or a combination*

- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups sugar
- 3 eggs
- 1/2 cup buttermilk
- 1/2 cup of sour cream
- 4 tablespoons lemon juice
- 1 tsp. of fresh ginger, minced
- Zest of 2 lemons ( about 2 tbsps.)
- 1 teaspoon of vanilla
- Lemon Glaze
- 1 1/2 cup powdered sugar
- 3 tablespoon lemon juice, at room temperature
- 1 . Whisk the powdered sugar and lemon juice together and mix until the glaze is smooth.
- Lemon Cream Cheese Frosting
- 4 oz. of cream cheese, softened
- 1 tbsp. of lemon zest
- 1/4 cup of lemon juice
- 2 cups of powder sugar
- Mix the all the ingredients together until smooth and creamy.
