Dad's Meat Loaf

Preheat the oven to 350°F
- 2 teaspoons unsalted butter
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup finely chopped yellow onions
- 1/2 cup finely chopped green bell peppers
- 1 tablespoon minced garlic
- 2 large eggs
- 1/2 cup heavy cream
- 1/2 to 1 cup fine dried bread crumbs (depending on how firm you want the meat loaf)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon Creole Seasoning
- 1/2 pound smoked chorizo sausage, chopped into 1/2-inch pieces
- 1 cup bottled chili sauce
- 2 cups Veal Stock or
- canned low-sodium beef broth
- 2 tablespoons bleached all-purpose flour

- 6 big, meaty short ribs (about 4-5lbs in total)
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 3 lbs yellow onions, halved and sliced thin
- 2 tablespoons tomato paste
- 2 bottles dark beer (like Guinness or Newcastle Brown Ale)
- 2 tablespoons Minute Tapioca
- 2 bay leaves
- 3 teaspoons minced fresh thyme
- 1 tablespoon paprika
- 2 teaspoons ground cumin
- 4 cloves garlic, minced
- 3 tablespoons soy sauce
- 12 pitted prunes
- 3 tablespoons dijon mustard
- 2 tablespoons minced fresh parsley
Moroccan Rub

Better if you grind your own from whole spices, but if not, try to use fresh
- 3 TBS paprika
- 2 TBS Cumin
- 2 TBS coriander
- 3 TBS sugar
- 4 tsp salt
- 2 tsp cardamom
- 2 tsp cinnamon
- 2 tsp ground cloves
- 2 tsp nutmeg
- 4 tsp ground New Mexico red chili
Kale and Brussels Sprout Salad

Combine lemon juice, Dijon mustard, shallot, garlic, 1/2 tsp
- 1/4 cup fresh lemon juice-about 1 -1 1/2 lemons
- 2 TBS Dijon mustard
- 1 TBS minced shallot
- garlic cloves, finely minced
- 1/2 tsp kosher salt plus more for seasoning
- Freshly ground black pepper
- 1 tsp sugar
- 1 TBS hand crafted balsamic- optional
- 1 large bunch kale, center stem discarded, leaves thinly sliced, about 2 cups chopped
- 2 cups shaved brussels sprouts
- 1/2 cup extra-virgin olive oil
- 1/4 cup almonds with skins, coarsely chopped- I like TJ's less salt roasted almonds and skip the saute
- 1/2 cup finely grated Pecorino

- 2 tablespoons olive oil
- 1 tablespoon butter

"Stix and Seeds" Wheat Bread

- for a 2lb loaf
- 1 cup Almond milk, OR Buttermilk OR any kind of milk you like
- 2/3 cup water
- 2 TBS olive oil or butter
- 2 TBS. good desert honey
- 2 tsp. salt
- 3/4 cup sunflower seeds OR 7 grain cereal, Or mix the two! Be creative!
- 3 3/4 cups whole wheat flour
- 2 TBS vital wheat gluten
- 2 1/2 tsp active dry yeast (1 package)
Mamacita's Pork Carnitas

Mama's slow roasted, juicy, moist, crunchy carnitas! Packed with sabor! Que bueno!
- 2 lbs pork roast- boneless cut into 2" chunks
- 2 cups chicken broth
- 1 onion, peeled and cut into 1/4s
- 2 TBS fresh squeezed lime juice
- 1 orange, cut in half
- 1 TBS mexican seasoning (good red chili powder, Mex. oregano, cumin, dash of cinnemon and dash of cloves)
- 4 cloves garlic, no need to peel
- 2 bay leaves
- 1/2 tsp salt
- 1 tsp sugar
- 1 tsp blk pepper
- PICO DE GALLO: mix together
- 2 large tomatoes chopped
- 1/2 diced onion
- 3-4 cloves garlic- chopped
- 1 serrano chili- chopped
- chopped cilantro

- Chicken marinade:
- 1 fat TBS garlic paste( I use the ginger garlic paste that I keep around for Indian cooking)
- or smashed fresh garlic to make 1TBS
- 1 tablespoon malt or cider vinegar
- 2 teaspoons dried Mexican oregano
- 1 tsp salt
- 2 chicken breast halves with bone, halved crosswise
- 2-4 chicken drumsticks or thighs
- Spanish chorizo (2-4 links depending on how you like it)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper or fresh poblano, chopped
- 3-5 large garlic cloves, chopped
- 1 teaspoon ground cumin
- 1 teaspoon dried Mexican oregano
- 1 1/2 teaspoons smoked paprika
- 1/2-1 tsp hot ground chili (New Mexico or Allepo is great)
- 2 bay leaves
- 1 tsp achiote paste (find at a Mexican or Latin market)
- 1 fat pinch of spanish saffron
- 3/4 cup pureed fresh tomatoes, or canned
- 1 cup sherry or beer- you choose.. sherry brings a rich sweetness, the beer does not
- 3/4 cup chicken broth
- 1 cup long-grain white or basmati rice
- 1/2 cup frozen peas, thaw in a bowl with warm water
- optional: diced olives or capers. I use a mix of olives from my deli, a small handfull, pitted and sliced
