Grilled Korean-Style Short Ribs

Combine first 7 ingredients in medium bowl; whisk to blend well
- 1 cup soy sauce
- 1/2 cup mirin (sweet Japanese rice wine) or sweet Sherry
- 1/2 cup (packed) dark brown sugar
- 1/4 cup unseasoned rice vinegar
- 1/4 cup oriental sesame oil
- 1/4 cup minced garlic (about 15 cloves)
- 2 large green onions, chopped
- 5 lbs Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones; about 20 pieces)

Cauliflower Zahlouk

Steam the cauliflower with the garlic and lemon peel in lightly salted water until very tender, about 8 minutes
- 1 cauliflower (about 1 pound), cut into florets
- 4 cloves garlic
- 1 strip fresh lemon peel
- 1/2 cup charmoula thinned with lemon juice
- 1 or 2 small zucchini, parboiled and cut into 1/2-inch dice, or 1/8 pound green beans, parboiled and cut into 1/2-inch dice
- 1/2 cup cooked chickpeas
- A few oil-cured black olives, for garnish
Caramelized Chicken with Lemongrass and Chilies

In a medium bowl, season the chicken with the salt and ¼ teaspoon black pepper
- 1 pound boneless chicken thighs with skin, cut into 1/2-inch chunks
- 1 teaspoon salt
- Freshly ground black pepper
- 2 plump stalks lemongrass, trimmed, bruised (see Notes), and minced (1/2 cup), divided
- 2 tablespoons vegetable oil
- 2 tablespoons sugar
- 1 large yellow onion, halved and cut into thin crescents
- 1 1/2 tablespoons minced garlic, divided (4 to 5 cloves)
- 3 red Thai chilies, cut into rounds
- 2 teaspoons fish sauce
- Chopped cilantro leaves for garnish
- Chopped green onions for garnish
Chocolate-Guinness Shake

Guinness stout and chocolate sorbet give this shake a deep, malty, unusual bittersweet flavor
- 2/3 cup (about 5 ounces/150 milliliters) Guinness stout, room temperature
- 1/4 teaspoon pure vanilla extract
- 6 medium scoops (about 1 1/2 pints/18 ounces/510 grams) French vanilla ice cream , softened until just melty at the edges
- 2 medium scoops (about 1/2 pint/6 ounces/170 grams) chocolate sorbet , softened until just melty at the edges
Basque Braised Chicken

The Spanish version of Italian "Scarpariello" A great one pot dinner cobbled together with chicken, sausages, tomat...
- 8-10 oz Spanish or Portuguese Chorizo sausages (4 slender sausages from my Roma deli)
- 2-3 lbs bone in chicken pieces (Ive also used boneless skinless thighs with good result)
- 1 TBS extra virgin olive oil
- salt and pepper to season
- 1 red bell pepper, sliced into strips
- 1 large onion, sliced
- a handful of sliced mushrooms
- lots of chopped or sliced garlic
- 2 large thyme sprigs
- 2 tsp oregano
- 1 orange, zested and sliced into quarters
- 1 cup fresh tomatoe puree( or 1 can roasted diced toms)
- 3/4 cup sherry
- 1/4 cup chicken broth (punch up flavor by adding some chix bullion paste too if you wish)
- 1 TBS good smoked paprika, hot or mild as you wish
- crushed red pepper to taste
- 1 chopped pickled hot cherry pepper and 1 TBS of the juice from the jar, or chopped pitted olive mix with juice, or even capers will do. You choose depending on what you like! Omit completely if you want. I like the vinegar kick of it.
- a handfull of fresh chopped basil and/or parsley

- DHANA JEERA RUB:
- 2 TBS New Mex. red chili powder
- 2 tsp ground cumin
- 2 tsp ground corriander
- 2 tsp ground blk pepper
- 1 tsp ground cinnamon
- 4 tsp sea salt
- 2 tsp sugar
- 4 boneless skinless chicken thighs
- Extra VIrgin olive oil
- 1 head garlic peeled, whole cloves
- 1 lemon or lime cut into chunks
- handfull of sliced mushrooms
- 1/2 cup Marsala wine (sweet), or white wine or Vermouth... I like the sweetness of Marsala

Preheat the oven to 400. Add dried chiles to a pot of boiling water
- 3 dried ancho chilies, or other large mild chiles
- 1 dried guajillo chile, or other large mild chile
- 6 dried chiles de arbol, or other small hot chiles
- 2 dried chipotle chiles, or other small smoky chiles
- 2 cups vegetable oil
- 1 teaspoon salt
- 1/4 pound queso fresca, grated
- 1/4 pound cotija cheese, grated
- 1/2 pound queso quesadilla or other good melting cheese, grated
- 1/3 cup finely chopped yellow onion
- 1 pound fresh chorizo or other hot sausage, casing removed, browned
- One 4-ounce can diced green chiles, drained, or 1 small fresh poblano chile, diced
- Fifteen 6-inch corn tortillas

- 2 racks of pork spare ribs- score the back membrane with a sharp knife or pull off
- Rub o Love, Aztec rub or other rub seasoning- Aztec rub doubles up the coffee mocha taste!

- 1/2 cup Kahlua Liquor
- 1/2 cup BBQ sauce- I used a honey chipotle bbq sauce- spicy and good!
