Slow-Cooker Pork Tacos

Put the ancho and pasilla chiles and the garlic in a bowl; add 2 to 3 tablespoons water
- 3 whole ancho chiles
- 3 whole pasilla chiles
- 4 cloves garlic, unpeeled
- 2 to 3 chipotles in adobo sauce
- 1/2 medium white onion, roughly chopped
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons honey
- 1 tablespoon cider vinegar
- Kosher salt
- 2 teaspoons dried oregano, preferably Mexican
- 3 3/4 cups low-sodium chicken broth
- 4 pounds boneless pork shoulder (untrimmed), cut into chunks
- Freshly ground pepper
- 2 bay leaves
- 1 cinnamon stick
- Corn tortillas, warmed, for serving
- Assorted taco toppings, for garnish

Cook noodles according to package directions; drain
- 9 lasagna noodles
- 1-1/4 pounds bulk Italian sausage
- 3/4 pound ground beef
- 1 medium onion, diced

- 2 cans (one 28 ounces, one 15 ounces) crushed tomatoes
- 2 cans (6 ounces each) tomato paste
- 2/3 cup water

- 2 teaspoons dried basil
- 3/4 teaspoon fennel seed
- 3/4 teaspoon salt, divided
- 1/4 teaspoon coarsely ground pepper
- 1 large egg, lightly beaten
- 1 carton (15 ounces) ricotta cheese
- 4 cups shredded part-skim mozzarella cheese
- 3/4 cup grated Parmesan cheese
Pan Fried Pork in Mushroom Gravy

- 8 oz Portobella Mushrooms
- 1/2 Onion diced

- 2 tablespoons garlic powder
- 2 tablespoons paprika
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 egg, beaten
- 1 (12 fluid ounce) can or bottle beer

- 1 tablespoon canola oil
- 1 medium onion, finely chopped (about 1 1/2 cups)
- 3 cloves garlic
- 1 (9-ounce) package artichoke hearts, defrosted, rinsed and dried
- 1 (10-ounce) package frozen chopped spinach, defrosted, excess liquid squeezed out.
- 1/2 cup reduced fat sour cream
- 2 tablespoons mayonnaise
- 1/2 cup (4 ounces) Neufchatel cheese (reduced-fat cream cheese)
- 2 ounces (about 1/2 cup) shredded part-skim mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- Pita wedges or crudites, for serving
