- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 1 1/2 cups (3 sticks) butter, at room temperature
- 1 1/2 cups granulated sugar
- 1 1/2 cups packed brown sugar (I used dark, but I'm sure light is fine, too)
- 3 eggs
- 1 tablespoon vanilla
- 3 cups semisweet chocolate chips (I actually used 2 - 2 1/2 cups of mini chips and it was perfect)
- 3 cups old-fashioned rolled oats
- 2 cups sweetened flake coconut
- 2 cups chopped pecans (optional - I omit)

For the filling, brown the beef in a large pot
- Makes 4-6 pot pies
- 1.5 kg (3.31 pounds) stewing beef (I used chuck steak cut into chunks, bone removed)
- 1 large onion, diced
- 3 carrots, diced
- 2 celery sticks, diced
- 250 g (8.82 ounces) mushrooms, sliced
- 2 cloves garlic, crushed
- 2 tsp smoked paprika
- 1 tsp each dried thyme, dried rosemary and dried oregano (I like the earthiness of the dried herbs)
- 2 bay leaves
- 500 ml (16.91 fluid ounces) (2 cups) strong beef stock (alternatively add a heaped tbsp bovril to 500ml (16.91 fluid ounces) water)
- 1 tbsp cornflour mixed with 50ml (1.69 fluid ounces) milk
- salt & pepper to taste
- 1 roll ready-made puff pastry, rolled out slightly
- 1 egg, beaten
Pumpkin Crunch Cake

This pumpkin cake is more custard-y than cake, but is delicious nonetheless
- 1 box yellow cake mix
- 1 can (15-ounce) pumpkin puree
- 1 can (12-ounce) evaporated milk
- 3 large eggs
- 1 1/2 cups sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups pecans, chopped (the original recipe called for 1/2 cup)
- 1 cup butter, melted
Missy's Peanut Butter Passion Cake

Directions 1. Preheat oven to 350 degrees
- CAKE
- 2 c sugar
- 1 c vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 3 c all purpose flour
- 3/4 c cocoa, unsweetened
- 2 tsp baking powder
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 c coffee, room temperature (water can be substituted for the coffee but it's purpose is to enhance the chocolate flavor of the cocoa)
- 1 c buttermilk
- FROSTING
- 8 oz cream cheese, room temperature
- 1 c peanut butter, creamy
- 1/2 c powdered sugar
- 1/2 tsp salt
- 12 oz non-dairy whipped topping, thawed
- 1/2 c chocolate sandwich cookie crumbs
- 2 c chopped peanut butter cups
- 1/4 c prepared fudge frosting (any brand) or
- chocolate syrup (optional)

Place milk and bread crumbs in seperate shallow bowls
- 1 cup milk
- 1 cup Italian bread crumbs
- 4 chicken breasts cut into halves (8 pieces)
- 1/4 cup margarine
- 1 cup chicken broth
- 2 cups whipping cream
- 1 tsp dried basil
- 1/8 tsp pepper
- 1 cup grated parmesan cheese

Preheat oven to 375ºF. Prepare stuffing as directed on package
- 1 (6 oz) pkg. chicken flavored stuffing mix
- 1 (10 3/4 oz) can condensed cream of chicken soup
- 1 tablespoon prepared, Dijon mustard
- 3-4 boneless, skinless chicken breasts, cooked and cut into bite-size pieces (I boiled mine)
- 3 cups fresh broccoli florets
