Cheddar Burgers with Red Onion Jam

- 1 teaspoon olive oil
- 4 cups vertically sliced red onion
- 4 teaspoons sugar
- 4 teaspoons red wine vinegar
- 3/4 teaspoon chopped fresh thyme
- 3/4 teaspoon chopped fresh oregano
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 pound extra-lean ground round
- Cooking spray
- 4 (1/2-ounce) slices white cheddar cheese
- 4 (1 1/2-ounce) hamburger buns, toasted
- 4 teaspoons canola mayonnaise
Smoked Turkey with BBQ Gravy

Mix all ingredients in a small bowl and reserve
- 2 tablespoons salt
- 1 1/2 tablespoons ground sage
- 1 1/2 tablespoons thyme
- 1/2 tablespoon black pepper
- 1/2 tablespoon Neelys Seasoning, recipe follows
- 1 gallon water
- 2 cups salt
- 3 cups apple juice
- 1 cup bourbon
- 1 tablespoon black peppercorns
- 1/2 cup light brown sugar
- 1 (22-pound) turkey
- Olive oil
- 4 cups hickory wood chips, soaked in water for 60 minutes
- BBQ Gravy, recipe follows
- 3/4 cup white sugar
- 1 1/2 cups paprika
- 3 3/4 tablespoons onion powder
- 1 tablespoon vegetable oil
- Drumstick, from turkey
- Neck, from turkey

Chocolate Coconut Balls

In a bowl mix together the nuts, condensed milk, almond extract and coconut
- 1 cup toasted chopped Macadamia nuts
- 1 cup sweetened condensed milk
- 1 1/2 teaspoons almond extract
- 8 ounces sweetened shredded coconut
- One 12-ounce bag semisweet chocolate morsels, melted
- 1 tablespoon shortening
Santa's Trash Cookies

Preheat oven to 350º and line two cookie sheets with parchment
- 3 /4 c. cup unsalted butter, at room temperature
- 1 /2 c.sugar
- 1 /2 c.brown sugar
- 1 large egg
- 2 tsp. vanilla
- 2 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 /4 tsp. kosher salt
- 1 /3 c.crushed potato chips
- 1 /3 c. Crushed Pretzels
- 1 /3 c. semi-sweet chocolate chips
- 3 tbsp. red and green sprinkles
- Flaky sea salt, for garnish
Turkey Picadillo Sandwiches

Preheat the oven to 350 degrees
- 3 tablespoons extra-virgin olive oil, plus more for drizzling
- 1 medium onion, diced
- 8 cloves garlic, chopped
- 3 bay leaves
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground allspice
- 1 1/4 pounds ground turkey
- Kosher salt and freshly ground pepper
- 1 6-ounce can tomato paste
- 1/3 cup golden raisins
- 1/2 cup chopped pimiento-stuffed olives, plus 2 tablespoons olive juice
- 4 soft sesame buns or Portuguese rolls, split

Shrimp and Deviled-Egg Salad Rolls
