- Ingredients (makes 36 marshmallows):
- Marshmallows:
- 3 large egg whites, free-range or organic
- 4 tbsp / 4 envelopes gelatin, I like Great Lakes Gelatin (28g / 1 oz)
- 1 tsp cream of tartar (to stabilize the egg whites)
- 1/2 cup powdered Erythritol (non GMO) or other healthy low-carb sweetener from this list (80g / 2.8 oz)
- 15-20 drops liquid Stevia extract (Clear / Vanilla)
- 1/4 cup cold + 3/4 cup boiling water
- 1 tbsp coconut flour to coat the outsides of the marshmallows (12g / 0.4 oz)
- pinch salt (I used pink Himalayan)
- Topping:
- 1 package dark chocolate (I used dairy free, soy lecithin free, 87% dark chocolate) (100g / 3.5 oz)
- 3 tbsp unsweetened desiccated coconut (18g / 0.6 oz)
- Other options for coating:
- ground or chopped nuts
- cinnamon
- raw cacao powder
- fruit powder (freeze-dried)

- 1 cup coconut oil, soft yet still solid
- 1/4 cup full fat coconut milk
- 1/4 cup organic cocoa powder
- 1/4 cup Swerve confectioners (or a drop of stevia glycerite)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon Celtic sea salt
Bone Broth ... beef, chicken or turkey

- 4 quarts cold water (reverse osmosis filtered water is best)
- 1 Leftover bones and skin from one pasture fed chicken (can also use beef or fish bones for other recipes)
- 1 whole clove fresh garlic, peeled & smashed ( I use a whole head of garlic)
- 2 TBS coconut vinegar (or organic apple cider vinegar)
- 2 TBS coconut oil
- 2 onions, diced
- 2 stalks celery, sliced 1/4 inch thick
- 2 TBS fresh rosemary (helps pull calcium into the stock)
- 1 tsp thyme leaves
- for soup .... 2 cups cooked chicken meat (breast or leg, add later once bone broth is finished)
