Baked Ziti from Everyday Living

Preheat oven to 450 degrees
- Coarse salt and ground pepper
- 8 ounces ziti rigate (ridged) or other short pasta
- 1 cup part-skim ricotta
- 1 large egg, lightly beaten
- 3/4 cup finely grated Parmesan
- 1 cup shredded part-skim mozzarella
- 1 jar (24 to 26 ounces) best-quality tomato sauce (about 3 1/2 cups)

Chocolate Chip Cookie in a Cup

Start by melting your butter in the microwave
- 1 Tablespoon Butter
- 1 Tablespoon Granulated White Sugar
- 1 Tablespoon of firmly packed Dark Brown Sugar
- 3 Drops of Vanilla Extract
- Small Pinch of Kosher Salt
- 1 Egg Yolk (discard the egg white)
- Scant 1/4 of All Purpose Flour
- 2 Tablespoons of Semi Sweet Chocolate Chips

- For the cookies:
- 1 cup shortening
- 1/3 cup granulated sugar
- 1/2 cup light-brown sugar
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour, sifted
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
- For the cookie shots:
- 1 cup dark-chocolate candy melts
- 1 1/2 cups milk

Layered Cappuccino Dessert

- 1/2 cup ground almonds or pecans
- 1/2 cup brown sugar
- 3 1/2 oz margarine, melted

- Ice Cream:
- 8 eggs, separated
- 2 pkgs vanilla sugar
- 3 Tbsp instant coffee
- 1 1/2 cups whip

Marshmallow Chocolate Chunk Coolies

- 1 1/2 cups flour
- 3/4 tsp kosher salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 stick margarine
- 24 oz semisweet chocolate, chopped
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 1/4 cup mini marshmallows
Golden Pan-Fried Fish with Quick Tartar Sauce

Cut fish into 4x1 1/4-inch rectangular sticks
- 2 pounds 1 1/2-inch-thick halibut fillets
- 1 3 1/2-ounce package panko (Japanese breadcrumbs; 1 1/2 cups)
- 1 tablespoon finely chopped fresh Italian parsley
- 2 teaspoons coarse kosher salt
- 2 teaspoons finely grated lemon peel
- 1/2 teaspoon cayenne pepper
- 3 large egg whites
- 1/4 cup dark ale or non-alcoholic beer (such as O'Doul's)
- 3 tablespoons (or more) extra-virgin olive oil
Homemade Onion Rings
