Irish Tater Totchos

I use Ore-Ida tater tots
- 2 (16 ounce) bags Cascadian Farm Spud Puppies
- 6 slices bacon
- 1 whole onion, diced
- 1 whole red pepper, chopped
- 1 whole jalapeno pepper, seeded and diced
- 1 cup cooked black beans, rinsed and drained if using canned (optional)
- 1 pinch salt and pepper
- 2 cups sharp cheddar cheese, shredded
- 2 whole avocados, peeled and pitted
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh cilantro, chopped
- 4 whole green onions, chopped, divided
- 1 cup salsa (optional)
- 1 cup sour cream (optional)
Sweet Potato Salad

A nice spin on the traditional potato salad
- 2 large sweet potatoes (about 2 pounds)
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/4 cup scallions, diced (about 4)
- 1 red pepper diced
- 2 tablespoons chives, minced
- 1 orange zest only
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon paprika
- 1 pinch salt and pepper
- 1 dash hot sauce
Meatball Stroganoff

Prepare the pasta according to package directions; drain
- 8 ounces fettuccine or linguine pasta
- One 1-ounce package dried mushrooms, such as porcini or shiitake
- 4 strips bacon, coarsely chopped
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 tablespoons all-purpose flour
- 1/2 cup beef broth
- One 12-ounce package caramelized onion refrigerated chicken meatballs
- 1/2 teaspoon salt
- 1/4 cup sour cream
- 1 tablespoon chopped fresh thyme

- 2 cups shredded cooked chicken breast
- 1/3 cup cooked real bacon pieces
- 1/2 cup chopped green onions (8 medium)
- 2 1/2 cups shredded Cheddar-Monterey Jack cheese blend (10 oz) Additional ranch dressing for dipping
