I really can’t say enough about this Creamy Italian Chicken Tomato Soup
- 3 large boneless skinless chicken breasts
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) can coconut milk (full fat)
- 1 cup chicken broth
- 1 (14 ounce)can diced tomatoes (add the juice)
- 1 8 ounce can tomato sauce
- 2 tablespoons Italian seasoning
- 1 tablespoon dried basil
- 1/2 teaspoon sea salt (more to taste)
- fresh ground pepper to taste

1. Preheat oven to 400 degrees
- 1 cup panko breadcrumbs
- 1 tablespoon chopped fresh flat-leaf parsley
- 10 tablespoons extra-virgin olive oil
- 1 pound orzo pasta
- 1 small butternut squash, peeled and cut into 1/2-inch wedges
- 2 small bulbs fennel, trimmed and cut into 1/2-inch pieces
- 1 small red onion, julienned
- 5 large tomatoes, peeled, seeded, and chopped into 1-inch pieces
