Tex-Mex Dip, Cold

Mix and set aside: avocados, lemon juice, salt, pepper
- 3 medium avocados
- 3 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 cup sour cream
- 1/2 mayonnaise
- 1 pkg. Taco seasoning mix
- 2 cans jalopeno refried beans (10 1/2 oz.)
- 1 bunch green onions, chopped
- 2 medium tomatoes, chopped
- 2 cans (3 1/2 oz.) chopped ripe olives
- 1 pkg.(4oz.) shredded cheddar cheese
Cheese Ball, Party

Combine cream cheese & cheddar cheese, mixing until well blended
- 1- 8oz. pkg. softened cream cheese
- 1 cup *8 oz.) soft cheddar cheese
- 1 Tbsp. chopped celery
- 1 Tbsp. pimento (or stuffed green olives)
- 1 Tbsp. chopped green pepper
- 1 Tbsp. finely chopped onion
- 2 tsp. Worcestershire sauce
- 1 tsp. lemon juice
- dash of cayenne pepper (optional)

Mix ingrediants together and chill
- 1 pkg. cream cheese- softened
- 1 cup mayonnaise
- 1 Tbsp. lemn juuice
- 1 Tbsp.l onion flakes
- 1 can cocktail shrimp or pieces
- 1 green pepper diced
Pizza, Spinach Carbonara

1. Preheat oven to 450. Unroll dough over bottom of lightly greased bar pan
- 1 pkg. refrigerated pizza crust
- 6 slices bacon
- 1 pkg. (6 0z.) baby spinach leaves (about 8 cups)
- 2 garlic cloves, chopped
- 1 oz. grated fresh Parmesan chesses (about 1/4 cup packed)
- 1 cup jarred Alfredo pasta sauce
- 1/4 tsp. ground black pepper
- 2 cups shredded mozzarella cheese, divided

In a medium saucepan, mix together 1 cup sugar, flour, salt, milk, and egg yolks, stirring until smooth

- 1/3 cup all-purpose flour
- 1/8 teaspoon salt
- 2 cups milk
- 4 egg yolks, beaten
- 1 cup white sugar
Beef Enchilada Pie, Healthified

- 1 lb. extra lean ground beef
- 1 medium onion, chopped (1/2 cup)
- 1 can (10 0z. Old El Paso red enchilada sauce
- 1/2 cup Green Giant niblets frozen corn, thawed and drained
- 1 can (4.5 oz.) Old El Paso chopped green chiles, drained
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 5 Old El Paso flour tortillas for burritos (from 11oz. pkg.)
- 1 cup shredded reduced-fat Mexican cheese blend (4 oz.)
- Fat free sour cream if desired

- 2 1/4 cup flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda

- 1 cup sugar
- 1 cup brown sugar
- 3/4 cups margarine, melted
- 1/2 cup chopped nuts
- 1 1/2 cup mincemeat
- 1 can (1 lb.) pumpkin
- 1 pkg. (3 oz.) cream cheese, soft
- 6 Tbsp. butter
- 1 1/2 tsp. vanilla
- 1 Tbsp. milk
- 2 cups powdered sugar
Chicken A La King

Melt mayonnaise over low heat
- 1/2 cup mayonnaise
- 2 Tbsp. flour
- 1 cup milk
- 1 can veg-all (16 0z.) drained
- 1 can cream of potato
- 1 1/2 cup cooked chicken, diced
- 1 tsp. chicken bouillion
- 1/8 tsp pepper
- salt to taste

In a large bowl, combine all ingredients, except mayonnaise
- 1 lb. mild Cheddar cheese, shredded
- 1 med. onions, minced or 4-6 scallions with green, finely chopped
- 6 hard-cooked eggs, chopped (bring to boil- sit 10-15 min. in hot water.
- salt to taste
- pepper to taste
- 1 cup or more mayonnaise
