Seafood Dinner

Heat olive oil and butter over medium heat
- 1 lb scallops (I prefer the small ones)
- 1 lb shrimp, peeled and deveined
- 1 1⁄2 lbs cod (or other mild white fish)
- 1 (16 ounce) jar salsa (mild or hot, your choice)
- 1 cup dry white wine
- 1 cup chicken broth
- 1 lemon
- 2 tablespoons butter (not margarine)
- 1 -2 tablespoon olive oil
- kosher salt
- ground black pepper
Charred Ginger-Chile Corn

1. Heat the skillet over high heat until smoking
- Equipment needed: 12-inch cast-iron skillet
- 3 tablespoons expeller-pressed canola oil
- 3 cups fresh corn kernels cut from the cob (4 to 5 ears)
- 2-1/2 tablespoons minced fresh ginger
- 1 medium jalapeño chile, seeds removed and minced (about 2 tablespoons)
- 4 large garlic cloves, minced
- Salt and freshly ground black pepper to taste

- 3 cups masa harina flour
- 1 teaspoon salt
- 2 teaspoons garlic powder
- 2 1/2 to 3 cups warm water, plus more for shaping huaraches

- For Steak:
- 2 strip steaks (1 pound total)
- Salt, to taste

Towering Flourless Chocolate Cake

Make the cake: Preheat the oven to 325 degrees F
- For the cake:
- 2 1/2 sticks unsalted butter, cut into pieces, plus more for the pan
- 6 ounces bittersweet chocolate, chopped
- 6 ounces unsweetened chocolate, chopped
- 6 large eggs
- 3/4 cup turbinado sugar
- Pinch of salt
- 1/2 cup stout beer (such as Guinness)
- 1 teaspoon vanilla extract
- For the meringue:
- 2 ounces semisweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 tablespoon light corn syrup
- 1 cup granulated sugar
- 3 large egg whites
- 1/4 teaspoon cream of tartar
