- 6 cups water
- 1 medium onion, chopped
- 1 medium red bell pepper, diced
- 2 stalks celery, sliced

- 2 teaspoons ground cumin
- 2 tablespoons lime juice
- 1 1/2 teaspoons salt

- 1/2 cup all-purpose flour
- 1/2 cup cornmeal, preferably whole-grain
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons cold butter, cut into cubes
- 1 fresh jalapeño, finely chopped
- Zest of 1 lime
- 1/2 cup buttermilk

- 1/2 cup chopped fresh cilantro

Heat oil in a 6-qt. saucepan; add garlic and shallots and cook until soft, 10 minutes

- 16 cloves garlic, roughly chopped

- 6 3⁄4 cups heavy cream

- 1 tablespoon sake
