Country Style Vanilla Ice Cream

In a large mixing bowl, beat eggs until foamy
- 4 eggs
- 5 c milk (approx.)
- 2 T vanilla
- 2 1/2 c sugar
- 4 c whipping cream
- 1/4 t salt
Mushroom-Ginger Noodles

1. Prepare noodles, drain
- 5 oz. rice noodles
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 tsp dark sesame oil
- 1-1/2 c shitake mushrooms, sliced
- 1/4 c onion, sliced
- 1 Tbsp soy sauce
- 1/4 tsp salt
- 1/2 c green onions, chopped

- 2-3 Tbsp olive oil
- 1 large onion, chopped
- 1 lb. sausage (I use Italian crumbled sausage)
- 1 rib celery, sliced
- 1 Tbsp Worcestershire sauce
- 1-1/2 tsp dry mustard
- 1/4 c honey
- 10-oz. can tomatoes with green chili peppers
- 1-lb. can lima or butter beans, drained, with liquid reserved
- 1-lb. can red kidney beans, drained, with liquid reserved
- 1-lb. can garbanzo beans, drained, with liquid reserved
Sticky Soy-Hoisin Chicken Thighs

1. Combine first 6 ingredients in a large zip-top plastic bag
- 1/4 cup lower-sodium soy sauce
- 3 tablespoons fresh orange juice
- 2 tablespoons balsamic vinegar
- 1 1/2 tablespoons honey
- 1 tablespoon hoisin sauce
- 1 1/2 teaspoons chili garlic sauce
- 6 bone-in chicken thighs (about 2 pounds)
- 1 teaspoon cornstarch
- Cooking spray
7 Layer Salad

Layer in the order listed & let sit overnight
- Iceburg lettuce, 1 head, torn
- Green onions, 1 bunch, chopped
- Frozen peas, 10 oz., rinsed in cold water
- Hellman's mayonnaise, 2-1/2 c (1 pt) mixed with 2 T sugar & a little water
- Bacon, 2 lb. cooked until crisp & crumbled
- Swiss cheese, shredded, at least 16 oz.
Autumn Apple Salad

- 1 (20 oz.) can crushed pineapple, undrained
- 2/3 c sugar
- 1 (3 oz.) pkg. lemon Jello
- 1 (8 oz.) pkg. cream cheese, softened
- 1 c unpeeled apples, diced
- 1/2-1 cup pecans or walnuts
- 1 c celery, diced
- 2 c whipped topping
Okra Salad

Mix dressing ingredients well & set aside
- DRESSING
- 1/4 c oil
- 1/4 c vinegar
- 1 Tbsp sugar
- 24 oz pkg frozen breaded okra
- 6 slices bacon, cooked & crumbled
- 4 green onions w/tops, chopped
- 2 fresh tomatoes, diced
Mouth-Watering Stuffed Mushrooms

Preheat oven to 350 degrees F (175 degrees C)
- 12 whole fresh mushrooms
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper
Cream of Mushroom Soup

Saute mushrooms & shallots in butter
- 1 lb. fresh mushrooms, sliced
- 2 shallots, diced
- 1/4 lb. butter
- 1/4 lb. flour
- 2 c chicken stock
- 1 c whipping cream
- 1 oz. sherry
- 1/2 tsp basil leaves
Chocolate Chip Cheeseball

- 1/4 tsp vanilla
- 3/4 c confectioner's sugar
- 2 T brown sugar

- 3/4 c finely chopped pecans
- Chocolate graham crackers
