Meatloaf with Tomato Relish

Recipe courtesy Tyler Florence Tomato relish is good on any meatloaf recipe
- Tomato Relish:
- Extra-virgin olive oil
- 1 onion, finely diced
- 2 garlic cloves, minced
- 2 bay leaves
- 2 red bell peppers, cored, seeded, and finely diced
- 2 tomatoes, halved, seeded, and finely diced
- 1/4 cup chopped fresh flat-leaf parsley
- 1 (12-ounce) bottle ketchup
- 1 tablespoon Worcestershire sauce
- Sea salt and freshly ground black pepper
- Meatloaf:
- 3 slices white bread, crusts removed, torn into chunks by hand
- 1/4 cup whole milk
- 1 1/2 pounds ground beef
- 1 pound ground pork
- 2 eggs
- Leaves from 2 fresh thyme sprigs
- Salt and freshly ground black pepper
- 3 to 4 bacon slices
Macaroni Salad

Bring a pot of lightly salted water to a boil
- 2 cups uncooked elbow macaroni
- 3 stalks celery, chopped
- 1 small red bell pepper, seeded and chopped
- 2 tablespoons dill pickle relish
- 2 cups creamy salad dressing (e.g. Miracle Whip)or mayo
- 3 tablespoons prepared yellow mustard
- 1/3 cup white sugar
- 2 1/4 teaspoons white (or apple cider) vinegar
- 1/4 teaspoon salt
- 3/4 teaspoon celery seed
Banana Bread

No need for a mixer for this recipe
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon cinnamon (optional)
- Pinch of salt
- 1 1/2 cups of all-purpose flour
- chocolate chips (optional)
Spaghetti a la PHILLY

COOK spaghetti as directed on package
- 1/2 lb. spaghetti, uncooked
- 1 lb. extra-lean ground beef
- 1 jar (24 oz.) spaghetti sauce
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
- 2 Tbsp. KRAFT Grated Parmesan Cheese
Pumpkin Gingerbread (Jan's recipe)

Preheat oven to 350 degrees
- 3 3 3 cups sugar
- 1 1 1 cup vegetable oil
- 4 4 4 eggs
- 2/3 2/3 2/3 cup water
- 1 1 ounce) can 1 (15 ounce) can pumpkin puree
- 2 2 2 tsp ground ginger
- 1 1 1 tsp ground allspice (or pumpkin pie spice)
- 1 1 1 tsp ground cinnamon
- 1 1 1 tsp ground cloves
- 3 1/2 3 1/2 1/2 cups all-purpose flour

In a greased 9 x 13 pan, mix the box of rice, cans of soup and can of water
- 1 box Uncle Ben's Long Grain Wild Rice (original recipe)
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 can water (an extra can optional for moister rice)

- 1 envelope Lipton onion soup mix
- 2 lbs ground beef
- 3/4 cup dry bread crumbs
- 2 eggs
- 3/4 cup water
- 1/3 cup ketchup & BBQ (half and half)
- 1 tsp garlic powder
Slow-Cooker Honey Sesame Chicken

Very lightly season the chicken thighs with salt and pepper and place them in the slow cooker
- 3 pounds boneless skinless chicken thighs
- salt and pepper
- 3/4 cup honey
- 1/2 cup soy sauce
- 1/2 cup minced onion
- 1/4 cup plus 2 tablespoons ketchup
- 1 tablespoon canola oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon minced or grated fresh ginger
- 4 cloves garlic, peeled and minced
- 3/4 teaspoon crushed red pepper flakes
- 4 teaspoons cornstarch
- 1/4 cup of water
- Hot cooked rice
- Sesame seeds
- Scallions, thinly sliced
