Chocolate Chip Cheesecake

Preheat oven to 350. With mixer, beat cream cheese until fluffy gradually beating in condensed milk until smooth
- Chocolate Glaze:
- 6 oz cream cheese softened
- 1 can (14 oz) Eagle sweetened condensed milk (not evaporated milk)
- 1 egg
- 1 tsp vanilla extract
- 1 cup mini choc chips
- 1 tsp flour
- 1 (8 or 9 in) prepared choc graham cracker crust
- 1/2 cup mini choc chips
- 1/4 cup whipping cream
Zucchini Pizza Bites

- 4 slices large zucchini 1/4" thick (or 1 medium zucchini cut on diagnal)

- 1 1/2 cups granulated sugar
- 2 teaspoons baking powder

- 2 teaspoons pumpkin pie spice
- 2 teaspoons grated orange peel

- 1/2 cup vegetable oil
- 1/2 cup orange juice
- 1 cup canned pumpkin (not pumpkin pie mix)

- 1/3 cup butter (do not use margarine)

Slow-Cooker Mexican Chicken Tostadas

1 Mix jalapeño chili, garlic, chili powder, oil, lime juice and salt in 3- to 4- quart slow cooker
- 1 large jalapeño chili, finely chopped
- 10 cloves garlic, finely chopped
- 2 tablespoons Mexican chili powder
- 2 tablespoons olive or vegetable oil
- 2 tablespoons lime juice
- 2 teaspoons salt
- 2 packages (1 1/4 pounds each) boneless skinless chicken thighs
- 1 package (4.8 ounces) tostada shells (10 shells)
- 1 cup shredded lettuce
- 1 cup shredded Cheddar cheese (4 ounces)
- 3/4 cup Old El Paso® Thick 'n Chunky salsa
- 1/4 cup sour cream
Beef Stew

Place all ingredients into gallon zip lock bag, except broth and freeze flat
- 1 lb. beef cubed
- 1 chopped onion
- 2 large peeled and diced turnips or potatoes (optional)
- 1/2 can of tomato paste
- 2 cloves of minced garlic
- 2 tsp dried thyme
- 2 medium carrots chopped
- 3 celery stalks diced
- 2 bay leaves
- 2 tsp dried parsley
- 2 TBSP apple cider vinegar
- 3 cups green beans (optional)
- 1 cup beef broth
- Sea Salt and pepper as desired

- 4 tablespoons cocoa
- 1 stick butter
- 1/2 cup milk
- 1 cup peanut butter
- 1 tablespoon vanilla

Chicken Tortilla Soup (30 minute)

Need leftover chicken from "Crockpot Chicken Tacos" to make this in 30 min
- 2 cups of the shredded chicken (see "Crockpot Chicken Tacos")
- 1 - 32oz box of chicken broth
- 1 can corn(drain)
- 2 handfuls chopped cilantro
- 1 squeezed lime
- 1 can diced tomatoes (reg size)
- 1 can diced tomatoes w/ chiles (if you can't find the can get another can of diced tomatoes and a can of diced chiles)
- 1/2 large yellow onion
- 1 can black beans
- 2-3 table spoons of tomato paste
- 2 teaspoons of cumin
- 2 teaspoons of chile powder
- 2 teaspoons of garlic powder
