Easiest Crock Pot Salsa Verde Chicken

- 1 1/2 lbs raw skinless chicken tenders
- 1/4 tsp garlic powder
- 1/8 tsp oregano
- 1/8 tsp ground cumin
- salt, to taste
- 16 oz roasted salsa verde (I used Archer Farms)
Pumpkin Bread with Pumpkin Buttercream Frosting

For the bread: Position your oven rack in the middle of the oven, and preheat oven to 325 degrees
- Pumpkin Bread:
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 2 large eggs
- 3/4 cup packed dark brown sugar (You can substituted light brown sugar)
- 1/3 cup granulated sugar
- 2 teaspoons freshly grated orange zest (I omitted this)
- 1 teaspoon freshly grated lemon zest (I left this out, too)
- 1/2 cup canola oil
- 1 1/4 cups canned pure pumpkin puree
- 1/2 cup chopped, toasted pecans or walnuts, optional (I didn’t add the nuts to the batter, but sprinkled them on top of the frosted loaf instead)
- Pumpkin Buttercream Frosting:
- 1/4 cup (1/2 stick) unsalted butter, softened
- 2 Tablespoons canned pure pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla
- 3 cups powdered sugar
- 2 teaspoons half & half or milk
- 1/4 to 1/3 cup chopped pecans or walnuts, optional, for sprinkling on top

- 1/2 cup Fat free cottage cheese 1
- 1 Scoop vanilla protein powder 2
- 1 tbs Lime juice (fresh or bottled, I personally like key lime juice best!)
- 5-10 Ice cubes (Depending on how thick you like it, use less for a thinner consistency)
- 1/2-1 cup Water (Alter this according to desired consistency)
- 2-4 pkts Stevia (or 1/4-1 tsp sweetener of choice)
- 2-3 drops Green food coloring, or a handful of spinach to make it green!
- Optional: 1 tbs sugar free vanilla instant pudding mix
- Optional: 1/2 tsp xanthan gum 3, 1 graham cracker, crushed into crumbs
Whipped Cream Frosting

It WONT melt at room temperature like regular whipped cream! It's VERY stable
- 1 (8 ounce) package reduced-fat cream cheese, softened
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups of heavy cream

- 1 large bunch Romaine Lettuce
- 1 pound boneless, skinless chicken breast, grilled.
- 8 ounce can mandarin oranges, drained
- 1 red bell pepper, diced or sliced
- 4-5 green onions, sliced
- 1/3 cup chopped fresh cilantro
- 6-8 tablespoons dried cherries or cranberries
- Black or regular sesame seeds
- optional: diced fresh pineapple
- Vinaigrette
- 1/4 cup fresh squeezed orange juice (about 1/2 of a large navel orange)
- 3 tablespoons white wine vinegar
- 1 1/2 teaspoon dry mustard
- 2 tablespoons sugar
- 1/4 teaspoon sesame oil
- 1/4 teaspoon kosher salt

- 3 tbsp chili powder
- 1 1/2 tsp dried thyme
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1 large rotisserie chicken, meat removed and shredded (about 6 cups)
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, undrained or partially drained
- 1 can (15 oz) small white beans, undrained or partially drained
- 2 tbsp chopped pickled jalapenos
- 3 large garlic cloves, minced
- 1/2 cup chopped fresh cilantro
- 1 oz semisweet chocolate
- 2 tbsp cornmeal or 3 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
