1. In a medium bowl, stir together the yogurt, 1/2 cup balsamic vinegar, sugar, pepper, cinnamon and salt

- 4 large strawberries
- 2 teaspoons minced fresh parsley
- 1 teaspoon minced fresh mint leaves
- 1 tablespoon balsamic vinegar (optional)

The classic Mexican dish gets a healthy reboot while keeping its cheesy goodness
- Coarse salt and ground pepper
- 3 boneless, skinless chicken breast halves (6 to 8 ounces each)
- 2 tablespoons vegetable oil, such as safflower
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 1 teaspoon ground cumin
- 1 to 2 tablespoons minced canned chipotles in adobo
- 1 can (14 1/2 ounces) reduced-sodium chicken broth

Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil
- 6 tablespoons olive oil
- 2 lemons, 1 thinly sliced, 1 juiced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 pound trimmed green beans
- 8 small red potatoes, quartered
- 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

- Dressing (mix and pour over other ingredients):
- 1 -15 oz. can Black Beans, drained and rinsed
- 1-15 oz. can Black Eyed Peas, drained & rinsed
- 1-7oz. can Shoepeg Corn-drained
- 1/2 Jalapeño-seeded and finely diced
- 1/2 Anaheim Pepper-seeded and finely diced
- 1/2 onion-finely diced
- 1 bunch Cilantro-chopped
- 1/2 c. + 2 Tbsp. sugar
- 1/2 c. + 1 Tbsp. vinegar
- 1/4 c. oil
- 1/8 tsp. salt
- 1/8 . Tsp. pepper
- 3 dashes garlic powder

- 3 lbs sweet potatoes (about 5 large)
- 1/2 cup (1 stick) butter, divided
- 2 Tbsp plus 1/4 cup packed light brown sugar, divided
- 2 eggs
- 2/3 cup orange juice
- 2 tsp ground cinnamon, divided
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/3 cup all-purpose flour
- 1/4 cup old fashioned oats
- 1/3 cup chopped walnuts or pecans
Baked Chicken with Dijon and Lime
