- 1 package frozen green peas and carrots, thawed
- 1 cup diced celery
- 1/2 cup finely chopped onion
- 2 pounds ground beef
- 1/2 cup uncooked oats
- 3/4 cup milk
- 2 eggs
- 1 or 2 teaspoons dry sage, to taste
- 1 tablespoon Worcestershire sauce
- Dash of garlic salt
- Salt and pepper, to taste
- Cheddar cheese slices

- 2 garlic cloves, finely minced
- 1/2 tablespoon dried basil (or 2 tablespoons fresh basil, finely chopped)
- 1/2 teaspoon dried oregano
- 2 teaspoons grated zest plus 1 tablespoon juice from one lemon
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- 3 tablespoons mayonnaise
- 1 tablespoon red wine vinegar
- 4 boneless, skinless chicken breasts about 1 1/2 pounds
- 6 6-inch sub rolls, slit partially open lengthwise

Chicken-Broccoli Mac and Cheese with Bacon Recipe
- 3 cups prechopped broccoli florets
- 6 oz uncooked elbow macaroni
- 3 bacon slices, coarsely chopped
- 12 ounces skinless, boneless chicken breasts, cut into 1/2-inch pieces
- 1 teaspoon kosher salt, divided
- 1 tablespoon minced fresh garlic
- 1/8 teaspoon ground turmeric
- 1 1/4 cups 1% low-fat milk
- 1 cup unsalted chicken stock (such as Swanson)
- 1/4 cup plus 1 teaspoon all-purpose flour
- 5 ounces sharp cheddar
General Tso's Chicken

- Sauce:
- 1 pound chicken thighs ; boneless
- 1 tablespoon light soy sauce
- 1 egg, lightly beaten
- freshly ; ground black or white pepper
- Cornstarch, ; as needed
- 2 tablespoons dark soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons Chinese rice wine or dry sherry
- 1 tablespoon granulated sugar
- 3 tablespoons chicken broth or water
- 1 tablespoon minced ginger
- 2 teaspoons minced garlic
- 2 teaspoons cornstarch for thickening sauce ; optional
- Other:
- 3 green onions ; (spring onions, scallions)
- 5 to 10 small dried red chilli peppers ; according to taste
- 3 – 4 cups oil for deep-frying and stir-frying ; as needed

- 2 tablespoons oil
- 1 cup diced yellow pepper
- 1 cup plus 2 tablespoons diced Spanish onion
- 1 cup catsup
- 4 tablespoons merlot or other dry red wine
- 4 tablespoons Worcestershire sauce
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 pounds ground chuck
- 1/2 cup Italian breadcrumbs
- 6 slices sharp Cheddar cheese
- 6 hamburger buns
- 3 tablespoons butter
- 6 large crisp lettuce leaves

In a large bowl, toss the vegetables with a little olive oil and sprinkle with salt and pepper
- 1 - 1 1/2 cups veggies cut into strips like bell peppers, onions, zucchini, sliced portobello mushrooms, and/or summer squash
- 4 8- or 10-inch flour tortillas
- 1 1/2 - 2 cups shredded cheese like cheddar, monterey jack, or pepper jack
- A handful of black beans, rinsed and drained
- Sliced cooked chicken breast or strips of cooked beef
- Salsa, pico de gallo, sour cream, avocado, and or guacamole to top

- 1 pound broccoli
- 1/2 cup water
- 1/4 teaspoon salt ; or to taste
- 1/2 teaspoon granulated sugar ; or to taste

- 1 teaspoon cornstarch mixed with 1 tablespoon water
- 2 cups plus 4 tablespoons vegetable or peanut oil ; for frying
