- 1 cup dry white wine
- 1 can (28 ounces) whole tomatoes, packed in juice, chopped fine, with juice reserved
- 1 pound fresh or dried fettucine

Mango and Papaya Salsa

- 1 Mango, peeled with pit removed
- 1 Papaya, peeled with seeds removed
- 1/2 Red Bell Pepper, seeded and diced
- 1/2 Jalapeno (fresh), seeded
- 2 Tbs. Cilantro (chopped)
- 1/2 lime, squeezed (juice)
- 1 Tbs. honey
- 2 Tbs. red onion, finely diced
Roasted Tomato Tart

Put oven racks in middle and lower third of oven and preheat oven to 425 degrees
- 1 sheet frozen puff pastry (from a 17 1/4 oz pkg), thawed
- 2 lb plum tomatoes, halved lengthwise
- 2 tablespoons plus 2 teaspoons extra-virgin olive oil
- 3 1/2 teaspoons finely chopped fresh thyme
- 1/2 cup Parmigiano-Reggiano shavings, plus additional for garnish
Peach and Blueberry Crumbles
