Whisky Balls

Chocolate wonderfulness with a kick of rich whisky
- 1 (6-ounce) package semi-sweet chocolate chips
- 1/2 cup granulated sugar
- 3 tablespooons light corn syrup
- 1/2 cup whisky (I prefer Macallan 10 or 12, or Highland Park 12) (anything stronger and you should dilute it a bit)
- 1 box of Nilla Wafers (crumbled-I use a food processor but sealing them in a large freezer bag then rolling over the bag with a rolling pin works too)
- Granulated sugar for rolling candy
- I have tried to use natural sugar but it doesn't work well.
- Do not rush mixing in the sugar, corn syrup, and whisky. Make sure this mixture is smooth.
Bay Leaf Creme Brulee

Molds: arrange 8 6-ounce ramekins in a shallow baking pan large enough so that they don't touch
- 2 cups whole milk, plus additional 2 tablespoons if needed, or substitute low-fat (2%) milk for a slightly less rich custard
- 2 cups heavy cream
- 12 fresh bay laurel leaves, cracked (not California bay or dried bay leaves)
- 1/2 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
- 3 large eggs
- 5 large egg yolks
- 3/4 cup granulated sugar
- 1/8 teaspoon salt
- 1/4 About 1/4 cup turbinado sugar
Hawaiian-style Salmon Poke

Combine the first 8 (from yellow onions to sesame oil) ingredients in a bowl and mix until well combined
- 1 tablespoon finely diced yellow onion
- 1 tablespoon finely chopped green onions
- 1/2 teaspoon sea salt, preferably Hawaiian
- 1/4 to 1/2 tablespoon crushed red chili flakes, to taste
- 1 tablespoon furikake flakes
- 2 tablespoons soy sauce
- 1 tablespoon granulated sugar
- 1 teaspoon sesame oil, or more, to taste
- 1 ounce ogo or goma wakame seaweed salad, optional
- 1 pound fresh sushi-grade salmon, cut into 1/2-inch cubes
- 2 ounces ikura (salmon roe)
- lightly toasted sesame seeds, for garnish
- green onion, for garnish

In a mixing bowl, cream butter and sugar
- PUMPKIN DIP:
- 1-1/2 cups butter or margarine, softened
- 2 cup sugar
- 2 eggs
- 1/2 cup molasses
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon each ground ginger and cloves
- 1 teaspoon salt
- 1 package (8 ounces) cream cheese, softened
- 2 cups pumpkin pie filling
- 2 cups confectioners' sugar
- 1/2 to 1 teaspoon ground cinnamon
- 1/4 to 1/2 teaspoon ground ginger

- 1 bunch of organic celery
- 1 English cucumber, peeled if not organic
- 1 inch piece of ginger root
- 1.5 inches of turmeric root (or three smaller root sections)
- 3 organic carrots

1. Peel sweet potatoes and cut into 1-in
- 4 large sweet potatoes (about 2 1/2 to 3 lbs.)
- 6 tbsp. olive oil, divided
- 1/2 small red onion, sliced thinly
- 1/2 cup frozen edamame, shelled and thawed
- 1 cup thinly sliced celery (about 3 ribs)
- 1/4 cup fresh parsley, chopped
- 1 tbsp. fresh chives, minced
- 2 tbsp. lemon juice
- 1 tbsp. Dijon mustard

Spicy Avocado Hummus

- 2 cups garbanzo beans, drained
- 2 avocados
- 1 jalapeño, stem removed
- 2 cloves garlic
- 2 TBS fresh cilantro
- 1 TBS tahini
- 3/4 tsp salt
- 1/4 cup olive oil
- 1/2 cup water or liquid from garbanzo beans
- 1/4 cup lime juice
